Direct cooking was the first thing i mastered...the key is temp control...i cook bone side down for at least an hour and half..flip to meat side for 30 minutes....then wrap in foil with butter, maple syrup, and and apple juice for another hr on indirect heat... Sauce them up if wanted and cook an additional 30 minutes on indirect heat.. Best ribs ever...direct cooking is not hard at all

Man, this looks good. I love cooking on direct heat. Like you say, it really engages you with the cook. It's easy to smoke ribs, but if you can cook ribs on direct heat. Now you have become a grill MASTER🙏🏿🙏🏿

Yes sir, I always cook my ribs, chicken, pork chops etc.,and you definitely have to babysit that meat 🍖. I use my late father's homemade charcoal grill. Great video btw👌🏽👍🏼🫡

I was VolunTold by my sister that I need to cook 10 slabs of ribs, 5 baby back and 5 St Louis cuts for my niece's HS Grad party this weekend. I've been researching so here I am by YT. I was going to go Old Skool and cook direct to save time. Back in the day, we used to buy ribs off the 55g drums in garages after the club in the 70s ... LOL. I'm O G. 68, Hartford CT. Awesome! We have a large family. So, I’m always cooking a lot of meat. Direct grilling also allows me to save time and use all of my grill’s surface area at once. Instead of grilling indirect and setting up multiple zones and using half my grill at one time.

Another great tip I learned in the prep work is to square off your rib and cut that extra meat off either end. That helps as well!

Growing up in Delray, in Southwest Detroit that's exactly the way everybody cooked their ribs. Nobody had a store bought grill everybody had a 55 gallon drum converted to a grill never tasted such delicious tender ribs.

My mother use to grill on a18 in. circular grill with no lid, and the 3 legs tripod. She used to cook 2 slabs at a time. So, you're speaking my language. I still do direct grilling to keep me sharp, and when I have a large party to cook for. You're doing your thang!

I usually coat my ribs with Yellow mustard, both as a binder and as a flavoring agent (IMHO the tangy mustard counterbalances the fat & richness of the ribs). But I like this olive oil coating, seems like it would help not only minimize the meat sticking over the direct flame, but also act as an additional frying/browning agent. I'll have to try this method some time, thanks for sharing.

I've never had any luck grilling ribs, always came out tough. I started using a slow cooker and they are great, but I miss that charcoal flavor. ..... and you are limited on how much you can cook. I might give this a try. My favorite thing about youtube is seeing people who have a passion for something.....and I could tell right away you've got it. I subscribed.

@@daddydiysolutions I don’t be using enough charcoal I see lol you use 2 chimney full… I only use one ☝️ and I always close my vent at the top to smoke 💨 it out. But ima leave mine open 3 quarters like yours. And when they reach 140 to 150 internally wrap them. Let it ride for another 20 min … until the temp reach 200 to 205. I like my ribs like yours with bite. Not fall off the bone. Also I struggle with how much seasoning salt to use on each spare rib. Like for both sides I’m thinking 🤔 I need like 1tablespoon per slab of ribs top and bottom. Or that’s too much salt 🧂

I really don’t measure my seasoned salt. Just going for a light shade of orange on the meat. Any more than that is probably too much. And if I’m using seasoned salt, I won’t add any plain salt to prevent making them too salty.

Since I didn’t use the traditional “low and slow” method, I still had to be mindful of making sure the ribs were tender and moist. That’s why I did the foil wrap towards the end of the cook.

Bro when seasoning start with your pepper first. Helps other seasonings hold better. When using ur Texas crutch wrap them tighter to hold in all the goodness. I am gonna start putting my videos out but learning how to do all the tricks with videos. I salute you bro for doing your thing.

Thank you for that wonderful presentation on direct grilling! I was taught as a youngster, how to direct grill on charcoals and that’s the only way I grill to date. I never cared for gas grilling to me the meat has no taste or flavor. Also thank you for sharing how many people don’t know the proper technique for direct grilling. So many people serve you burnt 🔥 up ribs and chicken that’s under cooked and raw, so much I actually stopped attending BBQ’s and just stay home and grill my own delicious ribs and chicken. Keep on grilling!!!

The humility you have, Sir is 💯! Great video, I consider myself somewhat of a lightweight pit master until it comes to direct cooking ribs 😢! I am a master with steak, chicken, burgers, hotdogs, brats, etc... But Ribs, over direct heat, I learned my lesson the hard way, one slab was burnt, yes, I spelled it burnt, the other 2 (St. Louis Ribs BTW) slabs were not tender enough, so thanks for this great video! You've provided plenty of insight in this video, SALUTE TO YOU!🫡 P.S. As long as I watched my pops master ribs over direct heat, I just couldn't get it!😂 Again, great videos Bro! New dad here✊🏾 This was the best direct ribs video Ive seen on YT yet. And I've been looking for 2 days now. After watching this, Im considering kind of a reverse sear on the ribs that I make today. Start them on my smoker to infuse that cherry wood flavor, then finish them on my weber kettle with direct. You've made a subscriber out of me. Thanks a lot

Also, on each flip I spritz my meat with apple cider vinegar and apple juice. on the final 30 minutes of my 2-hour cook, I add apple juice. Then I wrap them in foil. But I found a Marsh Allen 18in. circular grill for my brother, and I to see if we could do direct grilling like my mother use to do.😆

The first time I did direct grilled ribs my wife and I fell in love, man. In fact it's been a while since I did some low and slow. I see you do a LOT of direct grilling on your channel, and I love it because I use a Weber Kettle. Indirect grilling is great but sometimes having that extra real estate that going direct gives you is really cool, especially when you're entertaining company. These ribs look fire man. I picked up a couple tips from you that I'm going to try next time I do some. Good stuff!

Great video what will help you with space is trimming them down from whole spares to st louis cuts & then you’ll have the rib tips available to cook as well. I like doing direct too I run at a lower temp though I usually run bout 275 & flip every 30 minutes for the first hour then wrap in foil let ‘em finish the last 30 minutes but that kills that crispy texture you’re after. I really got to work on my chicken on the grill lol

Thanks for this video. I've been looking for videos on how to grill ribs using direct heat. Most of the videos on KZbin in regards to grilling ribs were instructing people to use indirect heat. Direct heat is how I remember people doing ribs at family reunions and cookouts while I was growing up. The ribs get done quicker using the direct heat method. Sometimes you don't feel like waiting 4-5 hours for ribs. Plus, your ribs still came out juicy and tender. I'm definitely using your method for this upcoming 4th of July.

I never learned how to cook direct I have a girlfriend who actually learned from her dad it is amazing I been cooking indirect and it is very good as well but we had a picnic and Evan thought I started cooking early she came and saved the day with direct grilling, my only contribution was I put that hickory smoke on the ribs !! Hell yeah man! I've done 'em like that on a smaller grill and they turn out with that backyard charcoal grill flavor like steaks and burgers. I use some wood chunks in my charcoal also. May I suggest...for years I've used kingsford blue but when I switched to B&B oak briquettes it leveled the cook up a notch. They burn a little hotter at first but longer and have a cleaner smokey flavor. Great video!

I direct cooked a slab by force. Someone brought a marinated rack to a cookout, and I was only set up to cook mackerel and chicken. I did my best, kept watching the fire. Recipient loved them. I was always a meat smoker, if it wasn't burgers.

I been doing direct for about 15 years, only thing I would add is try to do a rack with BBQ sauce at the last 10 mins of grilling if you want sauce on them

Awesome video and thanks for you and your families service. Can’t wait to try the direct heat I’ve always done low and slow. After all the years I’ve cooked I can only remember 1 cook I felt was perfect. Ribs are finicky and some like off the bone and some like the snap.

I’m enjoying watching this. You explain everything so well I also notice you have not sprayed apple juice or anything else on the ribs so you really don’t have to do that. They look so delicious

Thanks. There’s nothing wrong with spritzing your meat while grilling for additional moisture. I’ve found that I can achieve my desired tenderness without spritzing. You’ve gotta be careful with spritzing. Too much spritzing can reduce the meat’s ability to absorb the maximum amount of that charcoal smoky flavor.

It’s funny cuz I’ve been perfecting my ribs. I’ve never once used an indirect or smoke method. So I guess I been doin it the hard way from the beginning. But I’ve done good if I do say so myself. Great video

Great job Daddy DIIY, I have worn out so many Chargriller Grills that had to hawl a truck load off lol . I also do your direct style but I also do half and half. First I direct grill my ribs 20 minutes then smoke them the rest of the way. try it out sometime and you will get the best of both styles. Keep up the good content brother and again Great Job!!

Nice job! I have that same chargriller along with 2 others by them. Always tryin different ways to cook up my ribs via smoker and seldom with direct which I have done many times before. My next cook will be direct with a light apple wood smoke. I dig what you did!!!!

Grilling first thing in the morning in AZ is better than getting cooked in the afternoon sun thats for sure! Maybe I'll take a stab at making a vid to post up soon. Thanks Man!

Get you a drum smoker. Its direct but the space between the grate and fire is distant enough that they wont burn as easy. The drippings on the coals create a steam effect of flavor. Open pit flavor. Cant be beat

I started grilling on the Weber 22 inch….logged a bunch of hours on that grill. Just keep putting in time on your grill and trust me, you’ll get the hang of it. Don’t get discouraged. I’ll be dropping some grilling videos soon using my Weber 22 inch.

I had a chargriller years ago. I loved the briskets i could put out on it. Only thing is it was very inefficient, i used ALOT of charcoal and when you were done and shut everything down it was so leaky that it would continue to burn all your charcoal. It was no saving, yhat mug kept churning until there was NO fuel left. But those briskets were on point and a thick smoke ring. Taste better than on any of my other smokers but harder to regulate

I appreciate your video. Those ribs are little tough for me. Good job direct cooking. Charcoal creates a great flavor. Maybe that why people use the pit barrel for ribs.

Ro this is my first time seeing your channel and dude your doing your Thang. I'm new to grilling period. I just got my first real grill and the only way to go is charcoal. Those ribs look really good. I kinda wish I could jump through the phone. I generally cook inside for my family and but wanted to try out a grill and so far did a fresh ham and leg quarters and some chops. I really do love cooking out and my wife wants me to cook on the grill every day.

Great videos. I have the same grill you have. I don't have the side box. I noticed you add 2 cans of charcoals. I only add 1. Probably the reason my heat keeps falling.

Thanks! For this particular grill, I've found that 2 chimneys of coals is the sweet spot. I'll adjust from there if necessary.

Looks damn good brother!!! And thank you and your family members for their service to this country. You're my new favorite grilling/smoking KZbinr to get advice from. Only thing I would suggest is showing how you regulate the heat with the dampers. I usually keep the firebox damper completely open and control the draw with the chimney stack damper. Just curious how you do it. But thanks for the great content.

I still cook ribs on a drum barrel made into a grill. Depending on my seasonings, I adjust the coals. I like a sweet heat so lots of sugar and cayenne. I use Hennessy, Apple juice as a spritzer. Just gotta know how to control your grill. Might be a 4 hr thing, might be 2hr depending on the weather and how many coals. I be rocking with the lump charcoal lately. Cleveland out.
