Because I really want to smoke in the steam to cook them. You have to cook really slow to make them tender. Don’t worry about the color.

The 321 rib method is based on smoking the ribs or other meats for 3 hours, wrapping them with liquid for 2 hours, and saucing them for the final 1 hour.

Next you BBQ Your choice line the bottom of pit with foil put about 2 layer of foil or take two aluminum pans one in the back and one front when you finish BBQ Take pans out and dump the ash out or new pans , roll up the foil out the bottom of pit

I enjoyed the video until the part that put me off was washing those oxtails in the sink, its unappealing. Lol! And then putting spices while in the sink. If I saw that prior, I would be vegan for the day. Still I can’t wait to smoke some oxtails.

We as a people all have a little Les in us. You can't get better unless you try, that is BBQ. Unfortunately here in the northeast, the oxtails are the size of quarters and not worth the price. This spring i will find another way to buy the right ones.

Looks good. Maybe start the fire an hour early but without lighter fluid. Helps give more of the wood smoke taste. Natural wood and charcoal will start to burn good. Just place a few pieces of cotton under the wood an light it

Man I'm 48 years old . There was a place call Floyd's Supermarket in Tuscaloosa Al back when I was a kid. They would sale oxtails for around .40 a lb now you can't hardly afford to buy them. Props to this Brother for just buying that many lbs. Family Man here fellas God bless.

if you cook beef on in-direct heat as you did, for 6 hrs and trimmed most of the fat off them and want me to believe they were drop dead tender? I have a very hard time believing that. I'm sure the lady who gave them a 10 was a relative and would say that regardless. I've been cooking and BBQing more years than you've been on this planet. The reason that MOST people make oxtail stew is because they require the MOIST (liquid) heat method. The tail on a cow is in constant motion, therefore it is considered a muscle of LOCOMOTION, just like the shoulder (chuck) which is constantly moving and the only way to tenderize pot roast is to stew it. You have a super intro (theatrics). I really like how you threw that (Disclaimer) "Use your discretion use what you and yo family like. As a preacher, I'm quite sure that if you told your congregation that ducks taste like turkey, they'd believe you. Me? I ain't falling fo that banana in the tailpipe bit!

Brother don’t soak them! It’s not “clean” smoke it’s dirty smoldering smoke. If you want heavy smoke just use a good hickory or mesquite wood brother!

Aloha. My honey is Asian. She makes oxtail soup. She cleans it, boils it to get the blood out, then simmers it in chicken stock with ginger, garlic, scallions shoyu,and some chilies. Served over rice with cilantro, bean sprouts, and other items. Beats chicken soup any day!
