My problem doing any sit-up/roll-up like this, is that my legs come off the ground! And I don't know if it's a strength thing or what?

You need to Strengthen the core . have your hands on the side of the thighs to help you lift up till the core strength/spine flexibility comes through practise. You can also use theraband and check if the legs are lifting or not .
