Thank you for this. I know you did this video years ago, but would it make a huge difference if you pulled the core out (4:43) before you blanched them to get the skins off, still putting the X's on the bottom for easier pealing? Thank you

Great process! Loved it. One question: why do you wash so thoroughly if you are just peeling them anyway? Wouldn't a good rinse do the job?

If you have burns or cuts on your hands as I often do, wear gloves. The tomato acid burns like mad. I use the high heat in my dishwasher to sterilize my jars. Adding vinegar to the water bath helps prevent a white film forming on the jars, if you use a water bath.

I am in the process of canning 80 pounds of tomatoes. I've been doing this for more than 20 years. I've seen this method of "skinning" tomatoes (by squeezng the tomato out of the peel) and it works for me on maybe half of my tomatoes.

Question: If you're removing the skins, why are you scrubbing each tomato? Seems to me a quick rinse would be sufficient.

Hi Lisa! Your process is so streamlined. I love it!! Do tomatoes canned like this last just as long as canned any other way? I’m canning for long term so do you think I’d be better off with pressure canning with lemon juice or should your way last just as long as pressure canning? I’m mainly concerned about the lemon juice. But maybe I could add lemon juice and still do them your way. 🤔
