Oven drying is about evaporating water and not the pepper oils. Slow and Low drying at about 175 F over 3-8 hours will dry your peppers and maintain the oils and flavor of your peppers. When the oven is too hot, the oils crisp and cook the peppers and eventually evaporate. The goal is water removal. Slow and Low!

I freeze my crushed peppers for long-term use. These crushed peppers are hotter than store bought pepper flakes. I also boil some apple cider vinegar and put some fresh peppers in a glass jar to make hot pepper vinegar. Cut the pepper to expose the seeds and it makes the vinegar hotter. That's really good on cooked greens.

@@carolynscott9007 I didn't see your question 3 years ago, sorry 😔. I just boil the a.c.vinegar for a minute or so.. I have already put my peppers in the bottle, pour the vinegar in and seal it. I also refrigerate it for a few weeks before using it.

Awesome! Now you can enjoy your peppers all winter long! 2 years ago I dried cayenne peppers by hanging them near a window. Then we crushed some into flakes to use on pizza. Also, I ground some peppers into powder for my own cayenne powder, it’s vibrant in colour and super delicious! We also put one or two whole cayenne pepper in our spice ball when making noodle soup. My Bigmama, my Mom's mother, was an avid gardener and amateur horticulturist. Working the gardens and trees with her gave me a lifetime of knowledge that is still serving me well. She used to string her peppers on thread and hang them in the window to dry. That's been my method for years and it works. I get a good 2 containers of pepper flakes to take us until the next summer.

If you use a wire screen instead of a baking tray they will dry faster, and a fan on in the oven it also works really well, never considered leaving the stem on to keep in the flavor I will give that a try now!

They will soften, even in a closed jar....pull the air out of jars (seal) and plastic bags for longterm storage.

Brilliant video, thanks so much for sharing! After watching this I harvested the last of my Prairie Fire and Cayenne chillies and dried them as you demonstrated. The Prairie Fire took almost 6 hours and the Cayenne almost 8 but the results were great; they crumbled brilliantly. I put them in the Zip lock bag whole, can I leave them like that and crumble them when I need them?

I just followed the process. Very simple to follow. I had a bunch of red and orange habanero peppers. I had an oven thermometer inside my oven. Temperature was 175 the whole process. I put them in at 5pm on Friday evening 11/4. They came out perfect. BUT: They weren't ready until 8am Saturday 11/5!! 15 hours!!??!

Please let us know how the smoking goes....it sounds wonderful! ♥️ I dried some of my over-the-top-hot jalapeños this year and then pulverized them to make a wonderful jalapeño pepper that we are sprinkling on everything!

@@CampfireKathy peppers turned out great. I smoked them at a steady 170° (Green Mountain pellet grill) for nearly 8 hours turning them once. I started pulling off the smaller ones around 6 hours and left the larger ones on to finish @ about 7 hours. I'm planning on crushing some for immediate use and vacuum sealing and freezing the rest for later.

I cut mine into slices and used an Excalibur dehydrator and they came out too hard..I'm guessing when the seeds are left in , they dry better but it's a guess. I wanted to make powder not flakes.

So would this method be good on red thai chilies 🌶. Also after you’ve dried them you suggested putting them in the ziplock bag right away. Will this not steam them, making them soft, or do they not emit enough heat for that to occur?

Hi Gary :-D Have you tried the peppers in a traditional dehydrator? I'm just wondering if the result would be the same, or if they would come out hard as a rock, and be impossible to crush without pulverizing them in a blender?

I don't know... but... would it be faster to dry if you remove the stems before putting them in the oven? Since there would now be a hole at one end, the water vapor (from the inside of the chili pepper) would then go out that opening.

Personally I half them, de-seed them and then dry them. It's a bit more work but the seeds aren't that nice to cook with tbh. I rather use more and get no seeds. Usually not drying mine higher than 130-140 and it often takes around 12h, 175 sounds on the high side but is probably okay if you keep checking. If you want all peppers to take up zero space, powder them. It's insane how many peppers that turns into only a small jar of powder.

I'm guessing this doesn't irritate your eyes or nose while drying? I notice it gets a little irritating when I stir-fry them.

Linda Money, I dried jalapeños and I cut them in quarters and they dried faster than if you leave them whole. They have an amazing flavor!

Nope the seeds are dead. They have moisture in them, but this process removes them.
