You wait. Until JUST as it falls from its tree. You go check the tree regularly. every single day. this is fruit well worth it. unique properties. extremely healing. once you check daily.. you want the fruit *FULLY RIPENED* from its branch. the properties are not fully developed UNTIL it is ready to release from its attachment to the branch. then it has its fullest nutritional value. If you PICK IT.. if you have to tug on it for release you've over stepped. you've halted the proper growth time. You wait. Until it is fully developed. The reason that people don't eat, like this fruit is because they are uneducated. gather them daily* throughout the season. Not every other day. or, once a week. they naturally rot. keep a net or a sheet under the tree. doesnt matter if the rain. You're going to sort. another way is this: when you go to check the tree daily * take a clean sheet. spread it out under all the branches. GENTLY (not like an angry salesman) gently shake the truck of the persimmon tree. Those that are ready will fall onto your clean sheet under. then you know that you have the best developed mature fruit of the persimmon tree. grew up with these and MANY other glorious God given creations of beautiful nature. plant your own. if you can. if not, use the gentle touch method b4 buying. they don't develop the same OFF the tree with time. avocados will. persimmons don't. they stay bitter if not harvested properly.

the bitter part isn't true for the fuyu persimmons though. maybe if they're really really really underripe they'll be sour though, but people can even eat the fuyu persimmons green.

Brazilian fruit called caqui, you can find so many varieties of it, chocolate caqui fuyu caqui , they are so good. The Japaneses brought to Brazil in the 20’s 😍

To est them right its better to let them mature till they deeper red and soft, otherwise they might taste astringent. This regards the “basic” variety, theres also the harder variety which wont get that soft.

There are two main types of persimmon. Fuyu is the flatter one you have here, can be sliced and eaten while firm. Hachiya is the other. It’s the pointy one on the bottom, I see people eat those ripe and soft with a spoon.
