Questions are commonly asked about the carbohydrate content in quinoa and whether this is a concern. Here is the answer: Carbohydrates are one of the most misunderstood parts of nutrition. There is a BIG difference between processed/refined carbohydrate rich foods and wholesome/natural carbohydrate-rich foods. There is nothing wrong with the latter, and they should be a part of our regular diet, and are NOT the problem. Carbohydrates ARE our main fuel. This is a biological fact for the human body. Fats and proteins can be converted and used as fuel, but this is not as straightforward and efficient. It is just like using the wrong fuel in our car. Yes a car can run on other fuels, but it is either not as efficient or will lead to a fast or slow breakdown of the "machine". What IS a big problem is that people eat all sorts of "junk" that gets classified as "carbs" and then all carbs are given a bad reputation. Yes, people eat too much bread products, cookies, crackers, pastas, and similar foods, which are a BIG problem for health and weight. But natural, wholesome, carbohydrate-rich foods like grains, beans, and vegetables are NOT the problem. Additionally, most people eat too many oils and all sorts of processed, refined, fast and junk foods made in oils or with oils, which are a huge problem. And people eat too many fats from the wrong sources, and diets too high in protein. These ARE all problems, but not wholesome, natural plant foods, like quinoa. It is also important to understand that it is not the way to optimal health, weight and longevity to see foods as isolated nutrients, or fuss about numbers. To have a healthy relationship with food, we must think of the whole food and its value, not break it down into isolated parts, which distort the food's value. If you have been conditioned to fear carbohydrates, it will be very helpful to either learn some basic biology of the human body, or consult the work of whole-food, leading-edge nutrition leaders like Dr. John McDougall (kzbin.info/www/bejne/j4PbgIWjjZKFqLM), Dr. Michael Greger, Dr. Joel Fuhrman, and the many similar doctors and movements that are helping people come back to what real food and real eating is all about.

Healthytarian, thanks for the explanation about bad and good carbs. I believe that just as all carbs are given bad names, all glutens are given bad names. The body needs everything to be balanced and I believe good gluten should be consumed for the body or skin will be dry and crusty without it. I think lady's fingers, which is Okra, gives a healthy stain that the body needs. Do you know any more healthy gluten that should be consumed? In everything, there is good and bad; we just have to consume the right ones. I await your response.

The problem is the food fads! Whenever we alarm like no carb, no oil, only protein, latest one, ketogenic diet, etc interfere with the normal balanced food triangle. So as here it is said, alarm should be on to processed foods n the said fads. So enjoy a natural balanced, varieties of all available food grains, lentils, pulses, fruits n multi coloured vegetables.

@lonie As with all things, but especially nutrition, it is about the whole package, not any isolated details. People take things out of context, like gluten, where it is not the gluten that is the big problem, but the food that it is in. Eating whole organic rye or wheat or spelt is not a bad thing, as long as someone does not have Celiac disease. What is bad, not just for gluten but for many other reasons, are all the processed and refined grain foods that also contain gluten. It can be argued that modern wheat in general is a problem, but that aside, the focus should always be on eating the right foods and not isolated this or that compound, which is never the answer to optimal health.

@Annamma Yes, food fads are definitely a big problem and play a big role in people's obsessions about food and all the different controversies and arguments. And yes, you are correct, the focus should be on eliminating processed foods period, regardless of what they contain or don't contain, rather than focusing and obsessing about any specific nutrient or food compound. Your list of food fad examples is perfect, except for the oil, which is actually a very processed food, regardless of the type of oil, and hence why true whole-food, plant-based diets do not include any oil.

WE must rinse quinoa many times, better soak it too to get rid of saponin and bitterness but the quinoa flour is NOT RINSED, s I Google quinoa side effects is leaky gut due to not rinsing it . Even rinsed it's not recommended to be eaten everyda Vitamins are mostly lost in boiling unfortunately

Hello, and greetings from Nottingham, UK! I've just seen your great video about quinoa, and I loved it!!! I've been eating this yummy seed for six years now and it's a firm favourite. I buy organic tricolore from my brilliant health food shop, and I can easily buy it on line too. I've experimented by cooking it with amaranth, which produced a very interesting 'porridge', and I really enjoy this with organic honey, a few drips of good vanilla extract, some pistachios and a goodly dollop of natural yoghurt, organic - of course! I've just bought some whole cardamon pods and I'll bash up a couple and add to my quinoa ioday to prepare my next batch. Pomegranate seeds with their gorgeous gleaming pinkness and a drizzle of date nectar with some toasted almond flakes are tomorrow's breakfast!!!

Karen Titmus you seem to have a really good energy and excitement about eating healthy foods and preparing them. Just don't really understand about the disconnect. Why you are using and still consuming animal products like honey and the yogurt. And you stress that your yogurt is organic like that makes some sort of difference. It doesn't. The dairy industry is cruel and corrupt in every country~"organic" doesn't change that. Dairy is dairy and if you just do some research right here on KZbin you will likely be rethinking some of your choices. The way you use quinoa is potentially awesome and just a little bit of tweaking once you understand about Dairy is all you will have to do to make those recipes of yours optimal. And I promise you they will be just as yummy. When we know better we do better.

I don't recommend eating anything that is too expensive or not native or easily available in someone's home area. In Africa, you have other amazing grains to enjoy that can easily take the place of quinoa, like Teff and Sorghum. Eating local is always best for all concerned :)

Toasting is not recommened in addition to boiling, as every time that heat is applied to food is changes the nutritional value and denatures many nutrients. This is why only boiling is recommened, and once cooked this way then many delicious meals can be made with the quinoa by adding spices and other whole plant food ingredients, including delicious sauces like these: kzbin.info/www/bejne/mXbZanqIYrmYm6c In the end, we have to decide if we want to manipulate our food in excessive ways just to please our tastebuds or if we want to take care of our food to best support our body's needs.

i love Quinoa, if i am going to use it for breakfast or in my smoothies i add cinnamon and a little ground cloves and ground ginger as it is cooking, for use with my lunch or dinner meals i add curry powder to the water as it is cooking....good stuff ;-))

The best place to start that I would recommend is simply cook a pot of it, and use it as a side to your meals, in a similar way like you would use rice. Similarly, just steaming a batch of your favorite veggies, and mixing in the quinoa and sprinkling it all with some Tamari sauce (organic fermented soy sauce) OR fresh lemon, garlic and sea salt will make a great, simple meal :)

I use it in tacos as a meat replacement. It's also great for nachos again as a meat replacement. Its wonderful for it. Love how versatile it is

One of the best and detailed cooking video's on Quinoa. I got into it after hearing my workers talk about it and love the pre made ones you just throw in the microwave but can get pricey and hard to find. You should have your own cooking show, be a news anchor or model. Very clear speaking no rambling and freaking gorgeous.

Very informative video. It's important to add varieties of seeds, grains, lentils, fruits, vegetables in a balanced way. Avoiding, processed, ready to eat, fad based, limited variety diet to be done away with. 👍

You are very welcome. With regards to food rich in calcium, in general, as long as you are eating a variety of foods daily, you don't ever have to worry about getting enough calcium without dairy. This means eating some fruits, some vegetables, including leafy greens and green vegetables, some grains, some beans, and some nuts or seeds daily. All of these foods have some calcium and together it all adds up. Plus, when we eat whole, plant foods mostly or fully in our diet, we don't have an acidic diet that requires more calcium, like diets rich in processed foods and animal foods. But if you want extra rich sources of calcium, look to foods like leafy greens, green vegetables, almonds, sesame seeds/tahini, figs, and most beans and lentils.
