Have you tried uno plugs, just used to put up poles with no problem in plasterboard, a plumber told me about them!!

I used these screws and they have come out and just left giant holes instead

Good video. But they self drillin plasterboard fixings are dog sh*t. You need fixings that brace themselves behind the plasterboard. They just churn it up.
