Ooh! Yes, that last bit about how to move the header away from the body text is the one thing no one else i've watched has mentioned. Thank you! I was having to hit enter to get similar results, and i wasn't fond of that look. I'll have to give this a go and see if it works for me (on my old version of Word). Thanks again.

How do I make each page a different section?

​@camillelacole6351 To make each page its own section, insert a section break at the end of each page. Put your cursor at the end of the text on a page, go to the layout tab, click the "breaks" button, and click "insert section break".
