Egg yolks have a gelatinous property in them that will thicken when frozen. By adding in salt or sugar before freezing, it will stop it from happening. Add in 1 teaspoon of salt per cup of eggs for eggs that will be used for savory items like scrambled eggs, omelets or souffles.May 1, 2020 I googled and this might be useful to you or others.

Thank you, thank you, thank you! I've been looking at videos that tell you to freeze them in silicone muffin containers (whole) or in ice cube trays. But they never go to the full extent of showing you how to thaw and then how they cook up. I sooo appreciate that you do show us full circle. I'm definitely going to use your method, as scrambled and in recipes is the only way I use eggs. God bless!

Thank you for the information. It's very useful. One small thing, most liquids don't expand when they're frozen - they shrink. Water is one of the only liquids (and the only non-metallic liquid) that expands when frozen. I don't think it matters to most people watching this video though. Great information.
