Egg yolks have a gelatinous property in them that will thicken when frozen. By adding in salt or sugar before freezing, it will stop it from happening. Add in 1 teaspoon of salt per cup of eggs for eggs that will be used for savory items like scrambled eggs, omelets or souffles.May 1, 2020 I googled and this might be useful to you or others.

Thank you,the UK is now rationing eggs so I'm starting to buy and looking for a work to store because Christmas will definitely be crazy, actually salt is used in almost all of the egg's preparations so salt not a bad thing.

TIP: Save sandwich bags by freezing whisked eggs in standard ice trays, then move them to gallon bags once frozen. I get a ratio of (about) 1 egg per 2 cubes.

Thank you, thank you, thank you! I've been looking at videos that tell you to freeze them in silicone muffin containers (whole) or in ice cube trays. But they never go to the full extent of showing you how to thaw and then how they cook up. I sooo appreciate that you do show us full circle. I'm definitely going to use your method, as scrambled and in recipes is the only way I use eggs. God bless!

Thank you for the information. It's very useful. One small thing, most liquids don't expand when they're frozen - they shrink. Water is one of the only liquids (and the only non-metallic liquid) that expands when frozen. I don't think it matters to most people watching this video though. Great information. I'm going to use it for my next camping trip.

I freeze the eggs then when frozen transfer to plastic bags or vacuum seal them. The cans stack nicely in the freezer. Run hot water over the bottom of the can to release the egg.

Sorry maybe I missed something, but isnt the issue with your whole frozen egg that you have not thawed it through all the way? Looks like you just partially thawed it but the yolk was still frozen. Thawed some more, then there would be no issue.
@MOMables

No. The issue is that the texture changes greatly. Eggs should be whisked before freezing. The yolk, after thawing, doesn’t reconstitute well on its own but ok when mixed with the white.
