Great video, well presented and clear instructions. Caught a handful of beautiful cod and bass off the coast of Dorset with my old man yesterday, way much to eat in a sitting. Nothing will go to waste. Appreciate the helpful tips you’ve given I’ll be sure to implement them

do i need to clean the fillet with saltwater or fresh water before freezing?

if i want to open a small sushi food truck in California, what would you recommend I do to meet a fishmonger for sushi grade fish? Every option I find online is quite expensive

I have a question. I bought salmon and cod fish for my maltese puppy ( I dont eat any kind of meat, i am a vegetarian ). I cut it and threw it in the fridge in an airtight plastic bag. Shall I freeze the fish? This is my first time so I am not sure, dont want to give any disease to Simba.

Hi good question. To extend freezer shelf life you want to push as much air out as possible to prevent oxidation and avoid any excess water to prevent freezer burn. If you do it really well, the fish will be fine for about a year. If you want to one better than this you'd vacuum-seal it and get 2 years out of it. The OSU Seafood Lab in Astoria is currently conducting freezing shelf-life tests (-18C, vacuum-sealed) and they said that even at the 2-year mark consumers can't really tell and don't rate it any lower in taste/texture etc. With this low-tech ziplock method, you'll get less time, but it absolutely works too.
