I (~1000 elo) won through a similar thing today, where my opponent thought he was defending a piece but I could simply take the piece (with my rook) that was doing the defending, since if he took back it would lead to me taking his rook instead. I feel like what you do is what I learned to do in the last few days as well, simply try to play a solid position until your opponent messes up.
