Congrats! I’ve made some pretty good and crispy wings on the pellet smoker with dry brining but I’m gonna give this method a go with coals in the bottom section of my old WSM. Looks money 🔥

Ya kinda have that backwards. Lump is hot and fast and briquettes is low and slow.

It definitely depends on the brand and size. Kingsford briquettes create so much ash, and don’t stay warm enough for longer smokes. Big lump charcoal is great for kettles or kamados, holding temps for a very long time. I know certain briquettes do last awhile though, but I wouldn’t personally choose them over large lump for smoking.
