The skin is one of the best parts. Put a cast iron skillet on the grill and start the fish skin side down in butter. It turns to a chip texture. So good

Obviously I’m not Bradley, but I’ve lived here 10+ years, I can potentially help share some recommendations. My favorites are (with “don’t skip” items from them): - Valentina’s (tacos, all the tacos) - Kerlin (bbq kolaches) - Leroy and Lewis (beef cheeks, smoked burger) - Micklethwait (jalapeño cheese grits) - Interstellar (scalloped potatoes) Franklin, La Barbecue, and Terry Blacks are all good but the waits there are always considerably longer. A lot of people like Stiles Switch but it’s been inconsistent for me. If wanting to venture further out, there’s Snows in Lexington but not sure how they’re operating since the pandemic. Then in Lockhart there’s Black’s, Smitty’s, and Kreuz, but honestly I’d take any of my favorites over these any day of the week. Rollin’ Smoke is on my radar but haven’t been.

Great video as always!! I'd love to see your take on some type of grilled gyro. It would be interesting to see what you come up with for a vertical spit on the chud box and the gyro meat! Just Sharing. So I worked at a chicken rotisserie place that had a wood grill a few years back, as the weekend closing manager I used to to love to slow cook salmon filets after closing. Once the line fellas would wrap up, I would salt up a filet and sear the outside on the left over coals for ten minutes or so, then lower the grill over the coals and cover the salmon with an upside down frypan. I would then go to the office and do all the closing restaurant paperwork, while having a few cocktails. An hour or so later, once all the coals had burned down and the grill fire bricks had cooled I would pull it and rest it on the line for a bit, just before locking up I would wrap it in foil and take it home to stick in the fridge for the wife. She would live that morning surprise. It was perfectly crispy on the outside, tender on the inside and smoky throughout. Now that I have left the restaurant biz I cant recreate that magical experience at home, but we both miss it very much.

So I’ll say that just like all beef and pork are equal, prime, choice, wagyu, angus etc not all salmon is created equal. A lot of what is out there is farm raised Atlantic salmon, not sure if that’s what that is but if you ever want to go to a different level try fresh wild Alaskan sockeye, which should be really showing up now. Stuff is incredible

If I didn't care for how someone cooked something, I just don't give it a "thumbs up", because it doesn't matter how they like to cook their food, or even how they chose to present the video.
