Mr. Robinson you are the man, you have just taken your channel to another level and you show that BBQ is not only about turf but also about the surf, keep doing what you are doing , you are the GOAT in my book of BBQ because you show the versatility of it while keeping the tradition at the forefront. BBQ is not just smoking it's everything that you are doing, smoking , sausage, turkey, grilling, fast, slow and everything else that you do. I have learned so much from you and everything that I try that you have shown is come out good. Aaron who, Bradley Robinson. if you see a order from the North East for one of your grills when you get caught up I will be ordering one of those grills. make it do what it do.

For a suggestion on cooking... I make a smoked sausage, pineapple chunks dish with whatever Mexican spices you have on hand. Definitely cumin. Chili peppers. Ancho? Chipotle? Whatever you have. Brown sugar. Sear sausage coins, about 1/4 inch and then add drained pineapple chunks. I use 1 can per sausage. You want the chunks to balance with the coins. Add the seasonings and cover to soften the pineapple. Remove the cover towards the end to get rid of some of the moisture. Sounds weird but the flavor is fantastic. Savory, sweet, spicy, umami. salty.

Man, this reminds me of the time I visited India. The food was delicious but the flies, but the flies took some getting used to. Perhaps invest in some type of fly repellant or cook under a tent with fly nets around it.

I gotta send love to this, Bradley is the man. Putting compound butter on an oyster is sacrilege in the uptight circles where I roll (Maine, Mass)---like putting Cheez Whiz on foie gras, but ngl, this looks amazing. One rec: when I grill a bunch of bugs, I like to toss em in parsley/garlic/lemon butter after they come off, so you still got that bright fresh acid note against the smokey grill flavor.

Bradley, you may already know but when shucking oysters, there’s generally a flat side and a domed side. When shucking, scrape the knife along the flat side. That’s where the adductor muscle can be cut through while shucking…if you didn’t already know. Now back to the regularly scheduled program. Lol

We used to have a old screen kicking around the beach we would get a bunch of Kiawe and start a fire let it burn down go fishing and get a ton of fish and bugs then throw everything on this old metal grate ahhhh so good did that about 6 days a week !

First time I watched this video, I totally missed you curing egg yolks (maybe/probably because of all the other amazing foods you cooked). Can I throw some pink salt (not himalayan) in to cure to sub for the sugar? Can I just cure yolks in salt? I am on a Carnivore diet so sugars are not an option for me. The only carbs I consume come in the form of spices.

I had a bunch of flies around my house this summer too. Then I found a couple big racoons making shelter on my patio. Apparently they've been eating from the fruit tree in my backyard and pooping on the roof which explains where the flies were coming from.
