I just tried this method and it is so much less time consuming. THANK YOU 😊 Only difference I use is place a cloth bag of fresh herbs in while cooking down at start. Gives an extra flavor enhancement and I usually take ALL TOMATOES at end of harvest so it blends perfectly. Always experimenting. 🥰

This is a fantastic method, I wished I had found this at the beginning of the summer! I used the oven method and you not only have to be careful about burning, you lose some of the tomato because it burns on the sides of the pan. I did this yesterday, it took less time and I lost no tomatoes! But I will say, depending on your blender, you might want to use the sieve right after blending to remove the seeds and skins. I boiled them right out of the blender and it was obvious that the seeds were still intact so I put it through the sieve to remove them and then started the water reduction process. I think this is also how I would make a pomodoro sauce so that its thick with minimal cooking. Great video!

The easiest method to make tomato paste! I did add salt and citric acid then canned it in 1/2 pint jars + water bath for 30 min to make it shelf stable for longer than 6 months. Thank you so much for sharing. You cut my work in 1/2 making this!

Brilliant. I tried it today and it worked great. Thank you for making and posting the video. I made sure to blend the tomatoes well (a few minutes) in my high powered blender to try to pulverize the seeds at much as possible. The fact that this method blends up the skins is a positive because the skins are supposed to be nutritious. My blender still left some seed bits, but I'm fine with that. They're also supposed to be nutritious. I was looking for the water separation stage in my boiling blended sauce and didn't notice it. However, I noted that you said you cooked yours for about 45 minutes and I used that as my guide. I started to pour off the mixture into the sieve and sure enough, it started to separate right away with the translucent juice filtering out.

I watch a documentary on Chinese preparing some "poisonous" tomato paste and shipping it to Africa. Since, then I didn't like buying tomato paste outside again, because, it seems they've even set up their factories on some of the African soil to make and sell these tomato paste to us. Watching this video now, I am very happy I've gained some knowledge on how to prepare tomato paste. And it does not seem like a complex or cumbersome process.

I grew up in Florida and my great grandparents farmed a lot of their food. I remember helping to pick tomatoes to eat fresh and to can. I couldnt help much as a small kid but i enjoyed watching. My job was to make sure the seals sealed the next day after the jars cooled and i took my job VERY seriously lol

Yes, It should survive a day journey depending on the weather sha. I'm guessing if it's somewhere like the US where the weather is cold most of the time, a day journey won't do any harm. But to be safer, you may use the method of boiling the paste in a jar in case anything happens and the supposed journey exceeds one day.

Thanks for this. Very educative. I notice that the tomatoes colour of red is different based on location. In some part of EU, the tomatoes don't come out this red. The one you used in this video has that natural redness people love to see in Jollof Rice for example ( specifically Nigerian Jollof rice😊). The natural redness looks similar to the tin/ canned packaged tomatoes. So, another video idea for you, may be to think of how to naturally enhance the redness of tomatoes paste when making it at home. 🙂 The redness is so important, that most tin/can packaging companies use it as a unique selling proposition(point). And most people being health conscious now, want to stay away from preservatives, starch and other things these companies add to their products (unknown to consumers). All the best!🙂

To avoid adding water at all, press out from the tomato enough of it's own juice to start of d initial blending then continue by remaining some quantity in d blender as base for d next blending as explained here

I am so glad I found your videos about tomatoes. This week I tried your muslin bag method except we use a Norpro hand cranked juice master instead of a blender that removes skins and seeds. I am from southeastern Illinois and have had such an abundance of tomatoes this season. This is really really helpful as it saves time and energy yet nothing goes to waste.

Ada, this is a very educative video with clear steps. But I just wanted to ask one simple question, did you add oil to the cooked version before storing in freezer bags? Not the sterilised one, just the one you boiled. It looks like some oil was added to make it bind unlike the uncooked version in the cheese (akamu) sack. Thank you for the time taken to do this time saving video 🤗

No, I did not add oil to the ones In the ziplock bags. I just left them for many hours to drain out water completely. That's why they look so gummy together. Thanks also for the compliments.

I just learnt how to make pour the first water back inorder not to loose anything. Great video and hygienically prepared. Will try it in January 2021, that's when tomatoes use to be abundant here in the East Nigeria.
