I bought a rotisserie chicken today. I separated white from dark meat, packaged about a half cup in sandwich bags and froze. As a widow, I now have meat for eight days as well as the chicken salad I made for tonight. I don’t save bones and skin because I don’t make soup very often. A rotisserie chicken usually costs less than a raw chicken and saves me lots of time. That’s one of my savers tricks.

My mother would go to the poultry market for a fresh chicken. With that she would make soup for Sunday’s lunch, chicken and rice or chicken stew. This fed a family of 5. Excellent video and please bring on more of your delicious recipes. Thank you for sharing 🌸

When I cook roast chicken I have to do 3 whole one we are a family of 4 adults and 3 teens who love roast chicken the first night it chicken dinner with mashed potatoes and gravy and veggies than cold chicken for sandwiches then I boil all the bones to make a beautiful soup with vegetables the kids will eat my biggest stock pot of this soup and they invite their friends over I don’t put in noodles or rice mainly because I can’t eat the starches but I am so happy the grandkids love it

I always buy a couple chickens at Hannaford when they are on sale for 99 cent a pound. I get quite a few meals out of a chicken too. I will have to try that casserole you made with the creamed corn and mashed taters. That looked delish. I used to watch Mornings with Granny but then I stopped. I don't remember why. So I'll hook back up with her youtube channel again. She did have a lot of frugal tips too. Yes was so humid and hot today and yesterday. We need a little relief! Hugs to you!

I do the same thing when I cook a big pork roast. I try to get as many meals out of it as possible. My goal is to start with a hunk of meat, use leftovers, use leftover's again, if you can see the meat at the end of the week you've done good. I make pork noodle soup with the bone and the leftover drippings from the pan, I do put it in the freezer and scrap off the grease the same way you do. I haven't tried the cream corn recipe before I'll have to give it a try. Thanks for the video

My suggestion would be to add defrosted diced peas and carrots over the chicken before the creamed corn, to add more veg to the casserole (or "hot dish" as it is known up here in Minnesota).

I love your videos, thank you for sharing. One of my favorite money saver tips that you might like: Anytime you are chopping veggies I.e. onion pieces, celery bush, carrot ends instead of throwing them away just store them in a freezer bag in your freezer. Then when you need to make soup stock you have your veggies ready to go. It’s so convenient and a great way to not waste produce.

I hate being hot. I miss the snow. I grew up in Ohio, that have been gone from there since 1976. I am in Georgia and with the heat index it has been 106 for several days. Luckily, I don't have to go out in it. My car AC does not work and it is miserable to go anywhere.

I know what you mean, here in Australia it gets bloody hot ( excuse my language) I love to rug up, getting toasty warm, having yummy comfort food. When it’s hot I’m like a beached whale, I have to have everything done by 10am, if I leave it too long it doesn’t get done my energy level is completely depleted. I have more get up and go in the winter.

I make my soup the same way, skimming off the fat. Looks so good! I’m in Florida and we won’t have soup until I make it with our Thanksgiving turkey carcass... though making soup for a tropical storm or hurricane is a good idea, too!

I have a couple of bags in my freezer for the peelings of carrots, onions and the ends and leaves of celery. Those are the things that usually get tossed out, so all of the flavors and none of the waste. I learned this from She’s in her apron.

Stock: I like to add a couple of bay leaves. It helps blend and bring out the flavors. Also, I add a little apple cider vinegar to the stock. That will help get the good stuff out of the bones. I keep frozen stock in the freezer at all times. It is so good for you. I love how gelatinous your stock turned out. Very healthy!

Great ideas thank you. Love the spicy pasta looks so easy but yummy. Can I suggest you try lamb mince in your next shepherd's pie. It is a totally different taste and more traditional. If you don't want to use straight lamb then mix with beef or pork mince.

Hi Emmy: Thanks so much for this video. I am going to try some of these recipes. My husband and I raise our own chickens and we like them a little larger than most - usually 7 to 10 lbs each. I don't usually roast them but put them in a big stock pot with lots of water, vegetables, bay leaves, peppercorns and cook them for hours. I make as many meals as I can from these such as chicken and dumplings, barbecue chicken, hot chicken sandwiches, chicken and noodle casserole, chickens noodle soup, etc. We always try to keep bags of cooked chicken in the freezer for quick meals. We even give the cooked vegetables from the broth and all the chicken bones as a treat to our chickens so nothing gets wasted. Greetings from midwestern Ontario, Canada.

I make broth without vegies then add once i have strained chicken. Couldn't bear to waste vegies so i add after straining - my choice 😊

The liver is bitter because of the bile, if you check it carefully you will see a greenish tinge part that can be removed and thereafter it is good

I've come across to u from KZbin Dawn in Texas (my brain shut down on how to spell the name of her channel) and now I'm slowly binge-watchimg many of your videos. And yet u mentioned today (not really today, as I am randomly choosing which of your videos to watch when), Mornings w Granny whom I have been watching for a long time already! I think this is my first time actually commenting on one of your videos/vlogs (or whatever we want to call this). I live alone, and I receive a Disability stipend (based on my mental and physical health), and as part of my health issues, several years ago, I had a weight loss surgery, and I need to take vitamin supplements for life, as well as to eat a protein-rich eating plan. Since a Disability stipend is not all that much money, yet I am entitled to some monetary discounts in certain utility bills, and w certain specific documented info from certain gov'mt offices, one can receive other specific benefits depending on what paperwork was submitted (and needed based on my percentage of my Disability, how many people live in my addres.ßdďmy ID info which then gives lots of information to some organizations in the city and my watching KZbin videos, helps me to acquire more ideas on how to better my shopping 'excursions', environmental experiences. Back when we were dating, my now husband and I would go out to eat at Red Lobster with friends. He doesn’t like seafood, so he always got their cajun chicken pasta dish. Your version reminded me of it. Next time I cook a whole chicken I will have to remember to make hours. I always get in a rut when it comes to ways to spin leftovers into a new dish. Everything becomes pizza.
