This video is actually part 1 of next weeks video where I’ll take you on a tour of my “from scratch fridge” and show how canning, fermentation and from scratch recipes get us through a week of meals on a budget. Take good care, friend!

Hi Roseann! The excitement is all too real! The journey I've been on of "weaning" myself off of market-made foods, continuing to reduce what goes on my grocery list, and well, seeing raw ingredients transform into what I thought I had to rely on the store to do, never gets old! You are so right...if you take a moment to read what's on the back of things...whew, it can be scary. This is part one of a fridge tour/what I eat in a week video I hope to get out this Sunday. Always good to see you!

@@freedomjam3670 I have! Actually I’d never heard about them until someone else on the channel suggested I look into them. I’m watching so many azure hauls and yes, I have a drop center about 15 minutes away from me. Here’s my plan….now that I have the canning pantry built, I’m going to slowly buy 2-3 food grade buckets a month so I can properly store things. I want to eat through a bit more of the existing inventory we have and then yes, I cannot wait to try Azure. The prices, quality, and control seem too good to be true!

With the butter made using the method described here, you can make clarified butter. Melt the butter in a pan and cook it until the 'clear stuff' splits from the 'cloudy stuff' then pour into a clear bowl and allow to settle. Pour off the 'clear stuff' and you have clarified butter which can be used to fry without burning. If you cook it until the 'cloudy stuff' toasts (not burns) on the bottom of the pan, congratulations, you have now made Ghee!

So happy to have found this video (and you!) I love watching creators who homestead, ferment and make homemade (and healthier) foods. You are great at explaining and I don’t usually see anyone who makes homemade butter!! Only thing I would change is use raw milk (it’s a game changer in taste AND nutrition!) I felt your excitement about homemade Mayo! It’s such a great feeling, I still remember the first time I made butter. Happy to found you & add another channel to my arsenal 😁 Thank you for simplifying processes for those who may be intimidated to start these processes or those who are working towards having a complete from scratch fridge. I'm sad that this only showed up on my main feed a year after you made it (and also your channel, how did I miss this content from you?!). I've made my own Mayo, Mustard, hot sauce and one called Mushroom Ketchup. But I was always scared when it came to tomato ketchup, and sour cream. Also while I've know the basics of butter making, I've always been scared at the thought of messing it up, but you make it look so simple. I'll have to give it a try now, especially since I LOVE herb flavored butter, nothing better than toast with garlic/herb butter on top. Also that ranch!!! I love ranch with some chicken and hot sauce. That is on top of my list of recipes I will try out! I'll also have to give your worchershire sauce a chance, usually I use canned anchovies(after a trip to the processor or a mortar and pestle) to replace worchershire sauce, but I also have high blood pressure and REALLY need to watch the salt, your sauce looks like a happy medium for me, since I love the taste of worchershire sauce. As for the pickled red onions, I've been doing that for years and LOVE IT!!! Actually I pickle a lot of foods...lol I'm almost the pickle king, but not really lol. You should try Emerald Garlic. Take peeled garlic cloves, two or three tablespoons to sugar (you can omit this, I only add it to give the finished pickle some sweetness) and rice vinegar(no water) in a mason jar for one to two weeks. You'll know it's ready when the garlic is a blue/green to jade green color. It goes great with any Asian dish or just on it's own as the pickling makes the garlic more mild and a little sweet (without the sugar, more sweet with the sugar). If you try this and run out of rice vinegar you can top off the jar with apple cider vinegar and it won't effect the final pickle.

While I love making most of these myself, saying they are cheaper than basic ready-made ones is just nonsense. Many when refined from their fresh ingredients, prolong storage-life, making logistics cheaper, so you can't really compete with the industrial methods when it comes to price.

This is an excellent video and so glad to find home made and very healthy versions using ferments. These aren't just better than store bought - they are health foods! I love your knowledge and the total ease you have with these ingredients. Brilliant stuff. One small comment... you pronounce Worcestershire better than most Americans... but I'm a Brit, and we are weird on the way we pronounce our place names 😂 At least you didn't pronounce it "war-chester-shire" like some do.. Keep the first part (that's perfect - I'm impressed) but change the "shire" to "shear" (wuhstershear - I know, odd) and you'll take a lot of Brits by surprise. 😁

Buttermilk is commonly used in India as a refreshing drink esp in summer. 3 recipes - 1) Savory drink (Indian maththā) - To 1 cup of buttermilk, add & mix 1 tsp sugar, 2 pinches of salt, 1 tsp ginger juice, finely chopped green corriander/cilantro and 1/2 tsp finely chopped green chilli, 1/2 tsp toasted cumin seeds (optional). Keep this in the fridge and enjoy a healthy homemade cool drink. You can grind ginger+green corriander/cilantro+green chilli+ toasted-roasted cumin seeds with little water and strain the juice instead of directly adding these 3 ingredients to buttermilk. 2) sweet lassi - to a cup of buttermilk, add a spoonful of sugar and a pinch of toasted cumin seeds powder. 3) With our daily lunch we have a small cup of this buttermilk in our plate. It is a great natural digestive. So all Indian meals serve buttermilk in the end, flavoured or plain.

Then I downloaded your book of recipes to get the amounts for each ingredient. The ingredient list is a little different. I would prefer making it like you said in the video. How much Kombucha do you add? How much raw honey? Would these omit the dried cane juice and whey that you list in the book? How much cayenne do you add?

The ranch dressing at most restaurants is just Hidden Valley powdered ranch mixed with mayo and milk. Which is what I use. I don't like premade bottled ranch. You can taste the preservatives in it.

I will be trying these for sure! How about a soyless soy sauce or a high quality blue cheese dressing? Would love to see your take on those.

Thank you so much Cassandra for sharing, plus watching you with your bubbly personality is such a pleasure. I love some of the condiments you shared and didn't realise that they can be made so easily at home. Take care.

I like the content but couldn’t watch it all as I was overwhelmed with the fake personality. Too much for this kinda video. Maybe speak to kindergarten students like that, but that’s not a real personality.

My fiance' is from the Philippines and she wants to come meet you really really bad. 😂 She has the exact same upbeat personality as you do. She'a social butterfly if ever there was one. She thinks your absolutely awesome and so do I. She and her papa own a farm and they grow a lot of their own food. They raise chickens, pigs and goats. Of course her favorite pet is named Goty and ain't nobody eating her unless they have a death wish.hahaha. They hace a river that flows through their property and they catch fresh shrimp for dinner anytime they want. We wish for you and your family a healthy happy life.

Love your videos! ❤❤❤ As someone in the media industry though, you have to do something about your recording volume, it keeps hitting in the red range. Not sure if this is pre- or post edit though. Look up some videos on editing youtube videos professionally for audio quality and you'll get this fixed in no time.

I have gotten into the habit of chopping onions, measuring a 1/2 - 1 cup into a bag and then putting small bags in a freezer container. Now they are ready to use when I need them. I buy them when bags are on sale. I don’t waste any now. I also freeze sliced onions, chopped and sliced carrots and sliced celery. It’s great not to waste produce. Looking forward to growing my own to use and freeze.

I know full well that i wont be doing these myself as much as i want to, but im still saving the video. However, for the forseeable future, i shall continue paying the adhd tax by buying the condiments 😅 these all look so nice Litehouse ranch tastes the closest to restaurant ranch that I've found, btw 😊

Oh, you missed two that are made from one you showed; fermented butter and cultured buttermilk. Rather than using sweet cream for your butter, use your sour cream! The butter is more flavorful and the buttermilk is tangy! I'm gonna try all the other ones, too! Thanks for the video!

Nice vid. I recommend to prepare for yourself alioli (garlic mayo with or without egg). It is as easy and I love this Spanish sauce.

I worked at a french restaurant in San Diego in the 70's. I will never forget the day the cheff said "what would you like to eat". I said I wanted a roast beef sandwich with mayo. He said we don't have mayonnaise but I will teach you how to make it. Best mayo I ever had

Thank you for these! I love your enthusiasm and the simplicity of the recipes. I am on a low sodium diet, and salad without dressing is really hard to eat. I look forward to trying your recipes because of the limited salt. 💕
