These pastes (flower, modelling or gumpaste) can be rolled thinner than sugarpaste, allowing you to do more with them, in this example, making intricate flowers. This type of paste sets harder so your models/flowers keep their shape. Sugarpaste (also known as fondant or ready to roll icing) is softer and what we use to cover a cake. Really amazing that you can make something so realistic from flower paste - really inspiring. Do you let your petals dry at all after the initial rolling/cutting? Thanks for the tutorial.

Glad you liked our video. We let the petals dry for a few seconds if the flower paste is a bit sticky, to prevent the ball tool from sticking to the petal when thinning the edges. You could also use a cornflour pouch to remove any stickiness. You may find you don't need to leave it to dry as it depends on the room environment, it is important not to let it set too much, otherwise you will find the paste cracks when you thin the petals. She dabs the petals with a cornflour pouch, as seen here - www.cakecraftworld.co.uk/shop/products/Cornflour-Pouch.htm this makes the petals less sticky and easier to shape using the ball tool. Hope this helps.

How do I keep my gum paste from cracking when it's drying and am I supposed to put the gum paste in the fridge when not using?

Hi Toni, what is it that you're trying to make? As a general rule, it's important to only use the amount of paste you need as the air will dry out any excess. Avoid cornflour and use icing sugar sparingly. Don't put in the fridge. Keep sealed and store in a cool dry cupboard. Good luck!
