There's something very wrong with this recipe. I tried it twice. Once exactly as instructed and it made more of a gel than a foam. Luckily the gel was so solid i was able to scoop it off the top of cocktail and salvage the alcohol. The second time I tried just one egg and it was better but still gel-y. That time was thinner and couldn't really be scooped off so it ruined the drink.

Sorry to hear it didn't turn out. Maybe less xanthium gum that's what makes it gel.
