Texas Sheet Cake is the base of many of my favorite cakes ever. My version has a bit of cinnamon in the batter for a subtle twist (but definitely optional). Then after it comes out of the oven I top the cake with a 20 oz. can of crushed pineapple (well drained) and then add a mocha fudge frosting on top of that. If the cake is still a bit warm, it helps the mocha fudge frosting spread easier. HEAVEN! That cake is a great basic that my family sometimes tops with the mocha fudge frosting but with chopped pecans and shredded coconut instead of (or in addition to) the pineapple! All three versions are fabulous and always moist and delicious! It's basically a great chocolate cake base for any yummy frosting, ganache, icing, glaze or topping of choice! Thanks for bringing a simple bit of Texas to the world wide web via the UK!

Here's a funny thought to lighten your day. Imagine sorted food in I'm A Celebrity Get Me Out of Here. Jamie would have the waterfall scene, Mike would constantly moan about waking up early, Barry would be the only one to fit in the tunnels and Ben oh Ben would try and critique the bush tucker trials and would smuggle condiments in his trousers. I must say I was feeling insecure at the beginning, thinking that my chocolate cake recipe was all wrong, but incredibly I found out you did it exactly like I do! Like, same steps same ingredients and amounts. Made my day! (I sometimes use sour cream, since buttermilk is harder to find). I do generally avoid ganache, not to upset my doctor. You know, my doctor is also my wife. I then make it a bundt cake and mix some chopped up dates and cranberries in the batter. It is the perfect pairing for a cup of coffee. Now if you excuse me, I'm going to congratulate myself for five hours now.

Looking good! Seems so similar to the very popular chocolate Kladdkaka that a lot of Swedish people like :) Literally translates to ''messy/sticky cake''. The process is about the same except that there is no buttermilk in ours, only a lot of butter and some milk. Served with whipped cream :)

My grandma used to make Texas Sheet Cake all the time! Chocolate, white cake, I think a red velvet too? But we always had a buttercream icing to top it off. The ganache sounds great though!

Could I also possibly request some recipes that could be cooked in a student kitchen? I.e. one that is cheap and can be made without anything fancy- no blender, no freezer, no nuthin' but would still work. My family’s Texas sheet cake is more like a chocolate version of lemon drizzle. Our icing is thinner and we poke holes with a chopstick so it drizzles in. Definitely the most moist chocolate cake ever.

I coat my pecans, with melted butter, cayenne pepper, garlic powder and smoked paprika... Mix them all around, heat them up in an oven... Soooo good :D

my mom's texas chocolate cake is the best.. it's fondly known in the family as 'kek hitam' or black cake..buttermilk is quite hard to come by in the part of Malaysia where I'm from, so she substituted it with milk+vinegar.

One of the things I will do when making a sheet cake, is you put the ganache(icing in my case) while the cake is still hot. It makes the surface really smooth.

Ben! I thought sugar was considered a wet ingredient. Shouldn't it have gone in with the chocolate and butter mixture?

Sugar for me is a dry ingredient. I guess it could change with the recipe, cookies it would be more wet? maybe with candy based recipes too, but with a cake it goes with flour, salt, baking powder etc.

I like to add espresso powder to chocolate cakes, it brings out the chocolatey flavour even more. Just a teaspoon instant espresso!

We made this for a large church gathering once and my mom gave this recipe to give different ladies to make. Same recipe but there were six (my mom made one too) different Texas sheet cakes. And we definitely don't make a ganache to put over it.

A trick for using honey is to spray whatever spoon or cup you are using with Pam spray or any type of vegetable oil spray to prevent it form sticking too much 😊

Substitute for buttermilk 1. Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup. 2. Add enough milk to bring the liquid up to the one-cup line. 3. Let stand for five minute. Then, use as much as your recipe calls for.

Prriyanka Singhvi There are a few substitutes for eggs in baking (like bananas) but it can be tough to substitute directly in a recipe. Usually it's best to find a recipe tried and tested with the substitute (or experiment with it yourself!) :)

+Prriyanka Singhvi Sorry I know this is extremely late but my mother has a vegan and vegetarian shop and I was testing out some vegan cake recipes and a lot of them use flax seed eggs which is basically something called Egg Replacer. You can find it in supermarkets in the health food aisle or the Free-from aisle. It can be quite expensive for a box but the box that I have has 100 eggs worth, I did the math and it works out cheaper in the long run! Again sorry for this being 2 months after your comment but I hope it helps!

Oh, definitely! Apple sauce is great but in the UK, apple sauce isn't very common. It's a thing but it's not used for much, well from where I'm from in the UK anyways!
