I made it for the first time this morning! It was so creamy and smooth and I even skipped the nut milk bag! When soaking overnight do they need to be in the refrid?

I def soak in the fridge. Bacteria from sitting out on the counter are mostly not your friends.

I had the same question and in the end opted to soak them covered on my kitchen counter... I keep my AC really cold so I figure it was okay. Maybe next time I'll stick them in the fridge.
