Just beautiful as usual. Thank you. I was wondering how you get your rice paper sails white? Mine always look almost creamy/beige next to my fondant. For lack of a better word, they look almost dirty if I do not colour them. Not sure what I am doing wrong.

You can add white food coloring to the water that you dip them in. They may end up more opaque, but still whiter;) I just buy my rice paper on Amazon.

How long do you keep the rice paper in over? And afterwords i assume it can be refrigerated, correct?

I would say about 15-20 minutes. I would just keep an eye on them because it isn't always the same time. Depends on humidity. I would keep them out of the fridge if you can, but rice paper is more resistant to humidity then wafer paper. The puffs definitely need to be kept out of the fridge.

I wod say about 30 mins on the lowest setting. I kind of check about every 10 mins. It is done when they are no longer flexible. Good luck!;)

I’ve used a couple different kinds of edible gold powder and gold paint. They are always bitter! Is there a way to fix this? Or do people generally avoid eating the gold part?

Maybe use a lemon extract instead of alcohol to make it a paint? I usually tell them to not eat that part if there is a lot of it.

Hi new subscriber here, just wondering is there a way to add colour to the wafer sails you puffed up in the pan? I’ve done the ones in water before myself but I’ve never seen the way you puffed it up in the pan before. I’m just a hobby baker for friends and family but love to wow them with new technics, this is defo on my list to try out now 😊

That's what I would try;) once it is fried it is very fragile. You can dust them gently with petal dust or luster dust You can even touch the edges with gold or silver luster dust and Everclear. Let me know how it works for you;)

Yeah soak it in wa water withe color added. Let it sit for a minute. Take it out and let it dry flat on some parchment paper. Then you could try to fry it in an unflavored oil like in the video. I don't know if it will work since I haven't tried it, but it makes sense. Unless there would be something in the color itself that would prevent it from frying up right. I wish I had time to try! Otherwise, if you want to brush on some dry luster dust or metalic luster mixed with everclear or vodka and touch the edges with it , do that after it is fried and cooled.

Is the gold luster dust edible?

It is labeled as non edible but it is also non toxic. Meaning that it does not get absorbed into your body. It passes straight though. There are completely edible options also. They are just more yellow then gold.
