As a former cook of Asian cuisine - having been taught by a Karachi born and bred Family - there is so much effort in the cooking process when it comes to good Curry and such respect and appreciation of ingredients - the result is the great reward at the end. Watching Chef Hussain was an absolute pleasure and I will try this recipe. What a wonderful video and chef who is a pleasure to watch!

From a food safety standpoint you should always wash your hands after handling raw meat. After touching the raw chicken he touches corriander and the serving dish, but he's making a video. He probably doesn't do it when he's working. Some food safety managers believe beard snoods increase the risk of hair contamination because people touch their face more. Food preparers should never ever wear gloves (unless its for personal safety) as you don't know if a glove is dirty, but you do know if your skin is.

Having seen so many other videos claiming to be authentic and then using tomato puree, garlic paste, onion paste and even a jar of curry paste from a supermarket ! It's very refreshing to see a true master at work using simple natural ingredients that are not difficult to obtain. I shall be trying this one at home.

Very good demo. Thanks for sharing. (400 gms boneless chicken pieces in 4 tbsp rapeseed oil, I large onion, Gi 2" Ga 4 cloves , To 2 med sized in big pieces . Salt to taste, Kashmiri RCP 1/2 Tbsp, Turmeric 1/4 tsp, Kasuri methi 1/2 tsp crusshed, Cor pow 1/4 tsp. Simmer on slow in 1 to 1/1/2 cup of water.GC and Cor for garnish. )

Its a good honest and traditional Pakistani curry. Ive watched literally thousands of "BIR" vids, cooked literally thousands and yes some taste good but i always end up making the simple, traditional curries and they just taste the best. Hussain, its a great video and please do some more! This recipe looks very tasty. Interesting you use garam masala and coriander, i'm going to try this.

Hussain, I've tried all of your curry recipes. All have been great. I really enjoy your videos, they are very easy to follow and never involve ingredients that I cannot obtain. I am perhaps lucky here in that Dudley, close to where I live has three very good Asian cash and carries. What I would say however is that if you still hope to get your subscriber list up to 100k then you need to get more videos on screen. I think that these should concentrate more on the curry dishes as I am sure that they are the ones most people would go for. e.g. Dupiaza, Dansak, Pathi, Vindaloo, Korma etc.

Best demo I’ve seen. No madras powder, no mix powder, no paste, just a little Garam masala. Yes I know GM is a kind of curry powder but so many demos here using madras powder and paste and mix powder. Fresh ingredients, clear enough what is going in. Thoroughly nice seeming chap too. If this is a home garam masala mix, I’d love to know your ingredients, but for now I’ll use the one I have. Thank you for this great demo.
