Hi. I have some questions about this recipe. First, after you are finish mixing the syrup so it has that marshmallowy texture, do you put it on the stove or do you take it right to the fridge? I used your Recipe and made it vegan, I replaced the gelatin with agar powder, then I added 5 cups sugar, 2 (16.9FL OZ) bottle water, cooked it just like you said, boil then keep on simmer for 10 mins, once it was cool enough I poured the mixture in my stand mixer and added the liquid of 1 (15 oz) can of chickpeas, plus 1 Tablespoon Vanilla, Finally I lightly greased the biggest pan I could find in my kitchen with coconut oil, coated the greased pan with a mix of powder sugar and corn starch, like 1/4 Cup of each, My Goodness it Came out Beautifully. Thank you for the Recipe 😊

Great concept, but WAY too much sugar to be eaten alone as a cake. I think I'd take this recipe, reduce the serving, and use as a frosting over chocolate cake and cover the top well with crumbled graham crackers. Voila! Smores cake! :D

My sister in law makes marshmallow cake for her daughters birthdays. The eldest was anaphylactic to egg, wheat, milk and soy so normal cake doesn't work (even with all the egg substitutes, it's just not as good. Cupcakes kinda work). For her seconds 1st birthday recently she did it again because the eldest is still anaphylactic to eggs. She rolls it in sprinkles, it looks awesome!

One of my friends is a vegan and I was wondering what vegan alternative do you think would work the best instead of gelatin? The first that came to mind was agar but I know there are a few others...
