Ingredients for Alsatian quiche :
- Shortcrust pastry
- 250 g flour
- 125g butter
- 1 egg yolk
- 50 ml of water
- 1 pinch of fine salt
- 10 g flour (for rolling out the pastry)
- 10g butter or spray (for the tart tin)
- Topping -
- 1/2 red onion
- 125g Black Forest
- 1/2 Munster cheese
- 100g Comté cheese (if you don't like Munster)
- Cream mixture
- 3 eggs
- 250 ml whole milk
- 250 g Isigny cream
- A pinch of salt
- A pinch of pepper
- A pinch of nutmeg
- 1/4 bunch of flat parsley
