Living in Bavaria, it took me a bit to fall in love with Schnitzel. It really was the quality of the pork being cooked. I did not care for pork sirloin at all. Finally we found beer gardens that served quality pork loin and then I loved Schnitzel! I make it at least once a month back home in the USA using a pork loin that I cut and freeze into Schnitzel size. I use exactly the method you use with the exception of the salt and pepper shakers. I put some salt and pepper in tiny bowls and season the meat from the bowls. That way I do not place my hands that have touched raw meat onto the salt and pepper shakers. Served, as you do with a wedge of lemon, they are simply scrumptious!

My mother made schnitzel almost weekly and always used veal from unborn calf. It was almost paper thin and basically flash fried. It was so tender and delicious beneath the almost crisp coating. Served with a lemon wedge, mashed potatoes and cucumber salad.

Hello!! mhmmm... yummy!!;)) I am not a big fan of pork but.. sometimes I like to have it. 100% agree with You- cut should be thick!! So instead of grocery shop I go to the butcher and gettig a few thick pork chops and they should be on the bone. Probably its not a Schnitzel and just a pork chop;)) I cook it same way just I like to use "Panko"- Japanese bread crumbs. They are bigger and getting crispier. I fry pork chops in corn oil with a good table spoon of goose fat for deep golden color and stronger taste. My mother was Austrian and she made schnitzel quite often here in the US. Lucky for me, I watched her cook. She used the pork chops as seen here, or, pork shoulder steaks, but trimmed off all edge fat. I have done the same , but have also used pork loin which is excellent. Mom served it with American style potato salad, which the Austrians call mayonaise salad😂, and made from scratch sweet kraut, which is made with red cabbage. TIP: Do not allow the breaded schnitzels to sit. Get them into the oil as you make them for a the best crispy crust, or they can be soggy.

Due to having grown up a few years in Germany, I am in charge of cooking Tonkatsu in our house - my wife is from Tokyo and my familiarity with Schnitzel has made my technique almost flawless! Like you illustrate, I usually se pork loin and cut it for use. It is a bit small but works. Some times I will use pork shoulder slices for larger steaks.

When I lived in Germany, I loved the jagerschnitzel served with fries. There was also a 4 cheese and a spinach schnitzel that was also incredibly delicious as well, but my favorite will always be the jager. I've watched tons of videos about how to properly make jagerschnitzel, but I've never been able to recreate it the way they made it in Germany. They must keep their real recipes guarded extremely well.

Hi!! I am a lover of German food (give me a Schnitzle, kartoffelsalat and a Franziskaner weisbier and I'm the happiest girl in the world) and therefore love your videos. Thank you so much for posting them! :) however, I've been noticing you use a lot of vegetable oils with the premise that butter, lard or ghee are unhealthy fats. It's actually the opposite! I recommend reading Sally Fallon's books, especially her first, Nourishing Traditions. It gives a comprehensive look at all the nutrients our body needs and explains how decades of wrong information given to the public (such as saturated fats being the enemy) got us to record high numbers is obesity, heart problems and auto-imune diseases. It's really an eye opener if you're interested in proper nutrition! Thought I'd leave this here for you :)

I've just watched your old video too, BIG improvement here especially in regards to the point of view and audio-wise, both spoken and without the repetitive background music. I also really like your new benchtop. Normally I cook my schnitzels in olive oil in the quantity you used in your last video though in this case, you are going for a Vienna style of schnitzel which actually takes greater skill to create the separation between the meat and the crumb and does require more oil as you have used. Great video as always, I most often make pork or chicken schnitzels with occasional beef or veal but the latter less often as they tend to be much chewier than pork or chicken. I like my schnitzels topped with lemon juice and cream cheese, either with cheesy, creamy mashed potato and baked beans or in a schnitzel, salad sandwich OR if I am feeling really lazy or sore, I just cook the schnitzel, add lemon juice and eat as is. 😋

Made it tonight for our anniversary. This is the first time I ever tried it and it came out great. We're stationed in Japan, so we don't have an oven but used a crock pot on warm . Used Avocado oil. My only flaw was that I didn't use enough salt in the beginning of the process. My wife loved it and we'll defiantly be making it again when we PCS back to the States in March 24

Once again, a great recipe. When I make my schnitzel, i put a coating of horse radish and then mustard on the pork and leave it for about 30 mins before i start with the flour. It gives a fantastic taste to the meat once it's cooked

You are very close with the spelling, it's Jäger Soße ... and you probably don't have two of the letters available 😉 I think I will make a video with just that sauce since it is asked so often. But you can already find instructions for it in a different video here on the channel. There is a video for a quick Schnitzel that also shows how I make the Jäger Sauce (Hunter's Sauce). It might help you out until the sauce video.

I’m not sure about the outcome, you’ll have to try. But be aware that the frying time in a pan is only about 1 minute each side, I don’t know how that translates to an airfryer. You don’t want your meat to be dry.

My family comes from Germany. Yet for some reason back in the 30s when they moved to AZ they forsake the magic of german food and turned full blown southwest with their diets... I've been doing my best to reintegrate german dishes... But a fear the jalapeño has won them over 😢

I wanted to ask, you have been using an Induction cooktop a fair while now, have you had experience with gas cooktops? I am wondering how you compare them? and whether after having used induction quite a while, whether you prefer either gas or induction? I know at the very least, induction is VASTLY easier to clean, unlike gas hobs that tend to burn on and around the burners.

The cooktops that I have are not induction, though they might look like it to you. They are both just electric, I cooked on gas in cooking school and a few years ago when I lived in an apartment for a few month in Los Angeles. I absolutely hate cooking with gas. Beside my fear of burning everything down, cleaning the stove is just annoying, and time consuming. My German friend here recently moved into her new house and has a gas stove and she feels the same way. It’s great during power outages though ... if you don’t have a generator. An induction stove has the benefits of a gas stove, being fast, but not the downside of difficult cleaning. If I had to chose again, I’d probably use induction next time, But I’d have to get all new pots and pans I guess.

@@MyGermanRecipes I tried it with arrowroot flour and almond flour. It really doesn't work for frying it becayse the crust was too rigid and tended to crack. I did find it worked quite well in the kven, I just sprayed it in olive oil and it was pretty good. Thanks for all the recipes.

The pork in my market too is not great either. There is no marbling anymore, too lean, tough & not tasty. I use Canola Oil usually. I never thought of using clarified butter to fry cutlets!

The problem with your German cooking is that you had to buy your meat from an American grocery store. Always a challenge! Otherwise, it was a very instructional video. I loved the water spray bottle technique.
