How to Make a Quick and Easy Corned Beef Hash
For the potatoes: I cooked 2 medium Yukon Gold potatoes with the skin on for about 30 minutes, until fork tender. Let them cool, peeled them, then diced them about 3/8 inch.
INGREDIENTS:
1/2 cup diced onions
1/4 cup diced red bell peppers
1/4 cup shredded carrots
2 medium Yukon Gold potatoes, cooked fork tender, peeled, 3/8 inch dice
2-3 cups cooked corned beef, chopped
Avocado or canola oil
Unsalted butter
Kosher salt and black pepper
Your favorite seasoning
Serve with sunny side up eggs. Garnish with chopped chives
