she's using 9 inch cake tins so it's 625g of everything. for 8 inch tins (decreasing by one inch) , decrease the ingredients by 125g , so 500g of everything. if you need 10 inch tins , add 125g so its 750g of everything :)

Help! I am using your recipe to create my daughters cake for her birthday, and thought I would use the same sponge recipe for her cupcakes to take to school to share with her class mates. I love the recipe, but noticed that the bottoms of the cupcake liners are quite buttery when they come out of the oven. I am in the States, so working with not quite the same quality butter, and with an oven at about 320 F. They taste AMAZING so totally worth the effort. Thanks so much for your channel, and for sharing all your knowledge.

TIP: There's a secret to getting flat cake layers!! No need to scrape and waste!! They will be fluffy too... use cake strips. They are wet pieces of fabric you wrap around the outside of your pan.

Self-Raising flour is a plain flour that have baking powder in it already. When you want to make bigger cake or cupcakes, self raising is the best flour to use because you don't need your calculator to calculate the ratio of baking powder 1tsp baking powder for every 100-125g plain flour.Or because you are not sure how much baking powder you need to add because you don't want the cake to be heavy or too light (it will have a slightly bitter taste)

You can avoid having to trim your cake if you used cake strips. It stops the outside from over cooking and keeps the cakes level. You can buy reusable ones from Wilton or make your own with cloth and tin foil or paper twol and tin foil. It's quite easy and the results are phenomenal!

alex rojas I got a good one! 4:1 white choc to cream. Heat cream up but don’t boil then add to white choc cover for a few mins then slowly stir (stirring too fast can cause air bubbles) add Wilton white hell or titanium dioxide to whiten then bring temp down to 30-32c then drip on a cold cake xxx

I have my cakes in the oven right now. It's been 24 minutes but they're still not cooked through and I know it's because I baked my cakes in 7-inch tins and they're quite deep. The tops are getting quite brown though so I've put some tin foil over the top to trap the heat in and prevent the tops from burning. Keep this in mind people so you don't make the same mistake 😋

Your oven might have some cold spots here and there. I had the exact same issue, and I had to cook them for 35minuttes before my sponge was as it should be. The browning isnt a big issue tho as youll just shave down your cake when ur gonna decorate it anyways, but its always nice to use some foil, thats true

I would freeze it, trying not to mix the colours too much when moving it into a container so it stays marbled. Or if I'm using it straight away, just transfer it to a piping bag and top cupcakes with it 😊

Pop the cake cut offs in a food processor to make cake crumbs then mix in the excess frosting. Roll into balls and pop onto lolly sticks to make cake pops!

You could scrape the frosting off horizontally, carefully getting the same amount in every scrape, then just plop it onto a cupcake for a rustic rainbow dollop.

I love these videos! They are always so helpful... And let's face it, it's just great to watch how all these yummy cakes are made! I have a question though... What could you use on a cake instead of buttercream? My daughter doesn't like buttercream and I haven't yet found an alternative that I can use on birthday cakes that won't make fondant decor slip or melt...?

3 years late 😅 but theres 6 kinds of buttercream. Crumbs and doilies uses the typical ‘American’ buttercream: butter and icing sugar. Very sweet and not my fave. There’s also Swiss, Italian, French, German and Russian. I’ll leave a link to all the recipes for them too. Swiss meringue buttercream: cooks egg whites and granulated sugar over a double boiler, whipped to meringue and butter slowly beaten in. (Good stability) Italian: sugar syrup poured into egg whites as they whip and butter slowly beaten in. (Best stability) French buttercream: the same as Italian but uses egg yolks not egg whites. Less stable than both meringue buttercreams. German: a Créme patissiére (pastry cream/custard) with butter slowly beaten in. (Stability is ok) Russian: beaten butter with condensed milk (very soft not so stable)

You just use a cake level that's got a wire on it and you can move it higher or lower if you go to a store /market store that specialises in them you will see what you need
