I've been making this recipe for at least 2 years. It's soooo good! If you follow what they do here, it is near impossible to mess up. Of course, I've taken liberties on occasion, but I keep it close. I am sending this video to a colleague in Germany. Shared this with him his last visit.

Excellent recipe. 👍 Potatoes are a traditional frittata ingredient in Italy but I didn't get hooked until I visited Spain. Lots of tapas bars serve *_tortilla de patatas_* - egg, potato, sometimes onion. By the slice, some wet, some dry; simple and delicious. Now whenever I have leftover French fries I always have them the next day in a frittata. Mmm, mmm.

I also got hooked on tortilla when living in Spain. It was over 30 years ago, and I still make it here at home. I learned to make it with a different technique--all stovetop. Planning to try it with the hybrid technique presented here.

I finish mine under the broiler. I also love broccoli, but you gotta have some mushrooms in there too!

How can you follow recipe exactly when they don’t give exact instructions in the video? They purposely leave out ingredient amounts, how long certain stages of the recipe are ( approximately), when you turn down heat on the stove. I do like their kitchen chemistry explanations, but how about a little blurb listed after “ more” in the description ? You know why… so you pay to get through pay wall! Google about their site reviews and you will see some warnings about difficulty cancelling your subscription.

Perfectly executed frittata 👍👏❤️! Why make quiche when you can skip the pie shell altogether (less work) and make frittata instead 😊? The possibilities for frittate go as far as your creativity allows.

Honestly, I never knew broccoli could taste so good! Never occurred to me to pair it with feta, which stands up to the strong broccoli taste. Thank you so much for a delicious and nutritious recipe!!!

I didn't know that salt affected the egg texture that way. I'm going to do some experimenting.

Ditto! I was always taught the opposite (minus the science, obviously): that adding salt prior to cooking eggs makes tougher eggs.

@@kareninalabama It's so funny how "common knowledge" changes. Julia Child, Graham Kerr, Jacques Pépin, et al always taught to generously add salt to scrambled eggs, omelettes, frittatas, etc. Then Gordon Ramsay came along and started saying salting eggs would make them tough, and suddenly everyone was repeating that myth. Thank goodness people started questioning that and doing actual tests that disproved it.

I have not eaten that dish before, but it does look great and must be so tasty as well. If I had some broccoli at home and the other ingredients I would make it just to see how it taste.

I just watched Jean Pierre he said the worst thing you can is put the egg mixture is put it in a hot pan. Visit him and see why. Broccoli frittata.

I don’t like brown eggs. If I just put the eggs in and put it right in the oven, for 40 minutes will it not be brown on the bottom?

I've made this recipe 4-5 times, and the bottom is usually too brown. Fortunately, the overcooked part forms a skin that I can easily cut away. But still, seems like a waste (and extra work)

Looks delicious 😋 Just doesn’t look like dinner. More like a lite breakfast. But that’s just me, the type of person who’s worried it’ll be enough food before I even began to eat.

How can you do this without a non-stick pan? I don't spend money on items that won't last a life time and are made with less toxic materials, like cast iron and stainless steel. Thanks for the tips. I will have to try that milk and salt one soon.

*Gordon Miller* A well-seasoned cast iron or carbon steel skillet will work well with just a bit more oil used than shown here. In Spain, the similar tortilla de papas has long been made in bare-steel pans by using a *lot* of olive oil, and I really like the flavor it lends.

Not thrilled at all, never put eggs in a hot pan for a frittata, mix all your cooked ingredients in the egg then put in a cold pan, then bake. Eggs will get way over cooked and uneven. Thumbs down for this one!
