@@jamesgamblin3488 It is true. It was said about the famous physicist Julian Schwinger that he publishes to show you that he is the only one who can do it. Not a good idea.(Although he was very approachable apparently on a one-on-one basis). I suppose that Chef Jean-Pierre must have experimented in simplifying some recipes for his channel. It seems like he did although he is not too explicit about it.

I love this guy. I hope everyone realizes his recipe is based on the size of the pan he is using. Check it out before you make it, friends. I know people out there would try to fit this recipe into an 8-inch pan and then complain that eggs were burned on the outside and still liquid on the inside. No. You didn't pay attention. Step 1 in cooking is to use the correct size pan for what you are cooking. If you don't have the same size pan, you have to adjust the recipe and make it smaller.

For me, I like to see 'mistakes' especially since Chef JP doesn't edit out what he calls 'mistakes'. I see this as a learning opportunity and honestly, I'd be quite happy to see more of how to correct various mistakes because we all know we WILL make them! For instance, I made the delicious French onion soup recipe, cutting it in half. However, I did Not cut the amount of flour/butter for the roux in half. I tell you, somehow I had enough blonde roux to make a few gallons of soup, lol. I didn't know if I should just remove some of the roux before adding the stock (didn't seem like a good idea because too many ingredients were in it), or just add more liquid (which is what i did). Fortunately, I had just enough stock in my freezer to make it work, although my onion to 'soup' ratio was off - but it was very good anyway by some miracle. I now have French onion soup in my freezer to last the winter, lol. Anyway, I am never disappointed to see a mistake and learn how to fix it. TY as always chef for another amazing recipe!

Some things I would change on my next one. 1/3 the potatoes and cook them ahead of time. Less cooking of ingredients I believe I over cooked them because of the potatoes. My wife and I loved it but still to much, so I vacuum packed and froze the balance (expect one piece for breakfast) Thank you so much for all the hard work. P.S. This is what my Grandfather made me for lunch once per week when I would visit just to say hello. Thank you for the memories.

Yes chef, "sweat" the onions!! Love your energy & humility. Wish I had you as an instructor at culinary school. The school went out-of-business & the arrogant, snobby chef/ chairman of the savory department...you do not want to know...

Did anyone else see the smiley face appear when he poured the couli and it dripped? Then he just happened to say, "... whatever makes you happy..." . Adorable!

WTG Chef! Frittatas are one of my favorite ways to use leftovers from Saturday dinners. My favorite (leftover spaghetti sauce) sounds crazy to most people until they try it. We have to have fun, don't we? Love your show. Always when I'm watching, I find myself laughing and smiling.

I just had to watch this video today as we had frittata for dinner yesterday. Mine was made with breakfast sausage, onion, green bell pepper, mushrooms and a blend of cheeses. Delicious. My family loves frittata.
