I am sure I watched a film clip of Helen making a Black forest Gateau and now I can't find it. Did I imagine this? She is such a great cake maker, so I thought as I have never made cakes it would be good to learn from her.

Helen looks lovely. I am sorry to say that her method is not good and confusing. She starts off with weighing flour. So immediately my bowl is filled with flour which is not used until later. Butter and sugar should be first weighing. Also at no time does she say about turning oven on and more to point at what temp. Have a look at Paul Hollywoods clip.So clear and easy. Sorry Helen.

You could probably replace the butter with a vegetable base butter, and use nut milk for milk and whipped coconut cream

Looks good ! It looks naked on the top after going through making butter cream and powder sugar doesn't do it for me. I went to college in Paris le cordon blue and the Cia in upper state New York and took my certification there too for CMC and passed and CEPC CCE . Sponge was good but felt flat on execution.

Much confusion whoever I speak to. It's a sandwich cake (creaming method), not a sponge cake (whiskung method). Get rid of the Victoria bit of the name

Lmao, Victoria Sandwich Cake got its name because it was invented during the Victorian era and because Queen Victoria really loves it. It’s called sandwich cake because the sponge is sandwich together with a jam, not because of the creaming method. Also the sponge bit was because it is usually really light almost “sponge” like, not because it is made using whisking method. One could make a Victoria Sponge using all in one method or even rubbing in but it is still called Victoria Sponge/Sandwich Cake

@s0neskim yes, i understand all that and where the name originated. Among UK KZbinrs, there's no agreement on terminology: most say Victoria sponge, some (Paul Hollywood?) say it's victoria sandwich. I just see a lot of confusion and folks disappointed that it's not what they expected. Here, 'sponge cake' is specifically one made by whisking eggs (usually separated).

@@cassieoz1702 I understand why there might be a confusion amongst UK youtubers and I agree with the “sponge cake is referring to the whisking method where one whisk the egg”. I watched a video from English Heritage where they used whisking method because it is the “Victorian Way” so I am assuming the method has changed over time as butter is becoming more and more affordable. However the title of the video I was referring is called “How to make Victoria Sandwiches”. In short it is a Victoria Sandwich cake using whisking method (traditionally) but the recipe and method has modernized over the years.
