Victoria Sponge
The Sponge
200g / 7½ oz softened Butter
200g / 7½ oz Caster Sugar
250g / 9 oz Self Raising Flour / if you use All Purpose or Plain Flour add an extra 2 tsps of baking powder to th recipe
5 Medium or 4 Large Eggs
2tsp Baking Powder
½tsp Vanilla Extract
The Filling
300mls of double or Heavy Cream
1½tsp Icing or Powdered Sugar
1tsp Vanilla Extract
120g of Jam
Powdered Sugar for dusting

Also being retired due to health issues I find cooking and baking great therapy to stop me getting bored. Loved the tip about making your own caster and powdered sugar, not having a spice grinder (yet) I just used a pestle and mortar. Saved a few bob already

I have watched several videos on baking a Victoria sponge cake. This is the best- it is methodical with clear explanations of each step. I am English domiciled in Norway and I really like the Northern accent - confidence inspiring. I will be trying this recipe.

Well ! I've given up reading, watching t.v.,knitting etc etc. I just spend my evenings watching Mr Kirkwoods lovely you tube videos. They are beautifully presented and so easy to follow - no loud music or excitable dialogue. I shall work my way through the recipes. Thanks too for all the useful little tips.

Me and our 12 year old daughter Inga have tried our hand at this cake. We added the sugar before seeing the part about making it fine, turns out ours is jam sugar! When it came time to do the "drop test" our batter stuck to the spoon like clay and we laughed so hard!!!! It's in the oven now and we'll give an update how it came out after our wee apple timer goes off!

Thank you so much for the tip about the castor sugar. Although I'm not a regular cake maker my friends are some of the best wedding cake makers in the world, I am a sugar flower artist. I'm sure my friends will find that tip extremely useful.

Just made this true English classic John , & trust me I give credit where credit is due . It’s the best recipe on the planet . I’m really interested in cooking traditional ENGLISH food . Two of our young grandsons stayed over last night. We made your pizzas (they love em) and today we are making this for their grandma. They really have got the baking bug now, and love watching your videos as we make things. Chicken and Chorizo pies & sandwich rolls are my to do jobs on Sunday. I've watched loads of the videos . I baked at the weekend and made a lemon drizzle cake and millionaire shortbread . But John's recipes and methods have shown me much easier ways . I'm 70 so it proves we are never too old to learn . Keep up the good work 👌

You're so helpful with all the tips you give. I had no idea about granulated sugar becoming caster sugar becoming icing sugar. Some of us (most of us?), especially those of us who only occasionally cook and bake, or barely do it at all, don't know this stuff and so head off to the shops buying items that we think are different/separate. But it's not just this, it's all the little tips throughout all of your videos, which when I've followed your simple instructions and the tips have always seen me have a successful outcome. Now I gotta go buy me those sandwich tin things coz we ain't got them. I didn't know they were a thing until now.

Success John - Thanks. Your hand made method brings back memories of my Mum making them in the 1950's/60's though not tried until now at 68. Especially impressed that you included the Americans in with their different terminology for powdered sugar, all purpose flour and degrees Fahrenheit too.

thanks John, literally just made this, as i was dividing the mixture i realised i had an 8" and a 10" oops, so just used the 8" and baked for 33 minutes, cut in half and a lovely birthday cake for a friend.

Another lovely cake John. I'm not a chef but what I do when I'm adding the eggs is add a little bit of the flour at the same time so it doesn't curdle. I don't know whether this is the right thing to do it not, I think I read it somewhere

I made this cake today and it turned out delicious. The batter looked a bit too thick at the end so I melted and added around 20-30g butter which helped. Thanks for the recipe.

Hi John …. I did this yesterday for my wife’s birthday cakes… beautiful…. But my batter didn’t turn out the same…. In the video you showed it being thin and falling of spatula….. now I did add 1 egg at a time..l but I think what you described about the mixture going abit bitty happened….. not sure why… maybe didn’t mix hard enough or butter started to harden up abit… but it was more of a thicker batter paste… still turned out beautiful and light airy… I was tempted to add milk or something.. but if anyone else is reading this I would always keep to johns recipe… as you know your guaranteed great results! Even if you have a wobble half way through like me…

Sounds like your eggs were a bit cold and the mix has split, but it should still have come together when you added the flour, but it also sounds like you quantities are out somewhat. Delicious:) I have just made this for the third time. I would leaf to cool on a backing try for half hr like Chef John says. Then in the fridge for a further half hr. This is to make sure its cooled way down. Thanks once again Chef John. Sand dancers are the best and not the worst..

Good Afternoon Mr. Kirkwood -- I made the Victoria Sponge Cake and found the cake to be very dry so I went back over your video again and identified that I overbeat the batter (I think that was the problem). I will be making it again this evening to see if that was the problem, I like to "conquer" my cooking errors. The Chantilly Cream spread is extraordinary, thanks for the recipe. I dismantled the problem cake, cubed it into 1/2" cubes then I made a fresh batch of jam, while it was still hot, I tossed over the cubes and let it soak in to soften the cake cubes. I made a fresh batch of Chantilly Cream then using a Sundae glass, layered the Chantilly Cream and cake cubes intermittently till I topped off the Sundae glass then placed a fluted strawberry on the top; the family went bonkers over the dessert. I want to make the cake again properly so I can enjoy this classic English dessert. Thank you for all of your tips on homemaking such as Vanilla Extract, Butter, and several others; it is so easy and satisfying. I haven't built the courage for making cheese yet but will this coming month. Mr. Kirkwood, you are a blessing to all that enjoy your cooking instruction which you present in such a gentlemanly manner. I was born and raised in Florida, USA and have always cooked primarily Southern Cuisine, since watching your and others videos I am branching out to travel the world via my cooking. I, too, had several businesses and am retired but had gotten lazy, however, with your teaching I have been encouraged to get up and enjoy what I love doing most which is cooking. Thanks again!!! Love the voice. Thanks John. Been making this since I was a kid. I’m 46 now. Not made it in ages. Tonight my son will have the Apple sponge version for a special treat. Good old Be-ro book. I used to make it all by hand too and should have stuck to it. Lol thanks for posting.

You really make the instruction videos well,I’ve been cooking and baking for years but I’ve forgotten (maybe got lazy) about certain things ie overworking the mix and rushing the eggs part. Cheers again John

From the USA (Washington State), I appreciate learning about caster sugar. Many recipes from the UK and Australia call for it, and now I know how to make it!

When you make your own powdered sugar add a teaspoon of cornstarch to the granulated sugar before grinding

*UPDATE:* so we used the wrong sugar and the cake came out lovely but with a gritty texture. I found my coffee grinder and we gave the sugar a whirl and it became lovely powdered sugar as you showed. I have a feeling that powdering the sugar is going to become a highly competitive task that all of the children will want to do haha! Now I need to find the kind of cake pan you used, as ours was the wrong type because the cake didn't cook in the allotted time and needed an extra 15 minutes.
