Thumbs up for you my sister. While still in Nigeria, I remember my mum adds ginger to the corn when we soak it and then blend it together with the corn before sifting. Hmmm It's the best and I miss it. u should try that too.

Yes, we drink it with sugar and evaporated milk + Akara, Puff Puff, Fried Plantains, Fried Yams, Moi Moi etc etc. It goes well with lots of staple foods. Ahhh, we have "kunun" a Northern Nigerian drink (looks like soy milk) and it is different from this one but I see the similarity in the names. :)))

Aw you are adorable Flo! yup that is what I do :) , ever since I found your channel , this is like watching my favourite TV :D , sometimes I put it on repeat too LOL,just to be sure I did it right and I'm thanking u for all this delicious healthy food! Exactly what I need, difference in European and Nigerean is big! what ? huge ! simply due the fact you put a lot of work in it , the food is REAL , it is handmade while it otherwise is a storebought meal that doesn't even contain anything nutritious! And once tasted it stays in ur mind , really! Had some experience tasting it yet never made these myself but guess what I'm having on the menu ;-) !! ow yes ! Totally!!

Madam Flo, your video is self explanatory, simple and easy to follow. You just demystified akamu for those of us who thought it was a difficult process. I have been carrying Akamu on flights over many years. My sister just decided to try Akamu in our kitchen using your directions. I am impressed. Well done. No more excess baggage filled with Akamu.

I tried mine with the broken corn and it came out nice since I can't find Muslin bag I improvised using a NEW pillowcase.I can now enjoy homemade Akamu :) Thanks to Flo, you are the best!!!!

Akamu/Ogi/Pap is a common part of the West African cuisine; we eat it in Ghana. I have friends from Togo, Cameroun, Senegal, Liberia and Ivory Coast who eat it too.Thanks for sharing. :)

Thanks for this video. I tried making this but it didn't turn out well. I think the corn didn't fermented after soaking it for 4days. Can you use warm water to soak the corn? How will you know the corn is ready for processing

In terms of nutritional value, the yellow corn has a higher β-carotene level ( β-carotene is converted to Vitamin A in the body and it is excellent for good eyesight and reduces the risk of some cancers) than the white corn. The β-carotene content is partly responsible for the colour of the corn and as additional information, hen fed with yellow corn (or β-carotene supplements) tend to produce eggs with a distinctly yellow yolk than those fed white corn (which is cheaper than yellow corn hence why some poultry farms use them)

Dry corn should be easy to come by in the US. If you don't have African Shops in your area search for "dry corn" on Amazon. you can use popcorn kernels, the dried corn kernels meant to be popped to popcorn. That should be readily available in most places and relatively cheap. It is not the exact proper type of corn, but it does well enough - after all, it IS dried corn.

Hi ms. Flo, your videos are so helpful. Pls I’m not sure if I made a mistake, because I don’t have a chiffon cloth... but I used a fine mesh strainer, to do the first round to let it settle. Now I used a panty hose ( new ooo 🤣) to do part two. I’m not sure if I did anything wrong but with my left over water there was some starch . I’m trying to find out which one is real ogi. The one that settled down in the water, or the one in the bag? Well Ill find out soon. Thank you!

Fausat you need to leave it overnight to sour (NOT in the refrigerator). That is after all the water has drained from it.
