Making almond butter at home is just as quick and easy as making any other nut butter. In fact, it only takes 50 seconds if you have the right tools. The final result is smooth, creamy, and delicious homemade almond butter.
With almonds being the only ingredient, almond butter can be tricky to make at home because almonds are one of the hardest nuts on the market. Almonds have a relatively rigid, tough texture that makes almonds hard to break down into smooth nut butter. However, if you have the right tools (I use my Vitamix) and know a few tricks, you can make homemade nut butter in seconds.

I stopped buying nut butters, over priced and sometimes wasteful as it is too large and it dries out. Making your own you can at least make the quantity you want and need. I've done hazelnut butter or pistachio nut butters.

Over priced for a reason. You don’t know what goes into making sure almonds are grown. And then grinding turning them into butter.

Nice, it's amazing how the hard almonds can turn into a creamy "butter" thanks to the natural fat/oils! Given the better omega 3/6 ratio in walnuts, have you ever made Walnut butter?

Hi Bryant - yes, I have! Walnut butter is actually easier to make because walnuts are a soft nut whereas almonds are a hard nut :)

@@bryant475 If I had to choose between almond butter and walnut butter, I would choose almond butter. Walnut butter can be a bit bitter.

You can over consume walnuts quickly. Look it up. Try to stick with 5 or 6 walnuts per day.

Sì, ho provato con un normale frullatore o robot da cucina, ci vuole solo più tempo. Mi fermavo ogni pochi minuti e pulivo i lati della ciotola, quindi la riaccendevo. Io preparo il burro di nocciole allo stesso modo

Hi Petra, I’ve read in a few articles, can’t remember where, that roasting nuts makes them unhealthy by changing their molecules or something like that. Do you know anything about it?

Yes! Almonds contain monounsaturated and polyunsaturated fats (and a small percentage of saturated fats). Monounsaturated fats are not affected by roasting, but polyunsaturated fats are. Polyunsaturated fats are vulnerable to oxidization, which is why I never roast nuts above 325 F. The ideal roasting temperature is between 290 F and 325 F where nutrient loss is kept to a minimum and healthy fats are unharmed.

Yes, but you do have to be careful not to use nuts that are too hot. If the almonds are too hot, they will melt the Vitamix container. This is not an issue when making hot soup in which the water prevents the blend from going above 212°F/100°C. But nuts are dry and with enough friction of the blade, they can go above 250°F/121°C where the container starts to melt.

Thanks for your videos, I really appreciate you! I have heard that soaking nuts over night in pour water breaks down enzyme inhibitors in the nuts, so that they're easily digestible .

Hi Teresa - yes! Raw nuts and seeds contain phytic acid and enzyme inhibitors, which are hard on the digestive system. Soaking breaks down these inhibitors to a good degree and unlocks and activates the nutrients within the nuts and seeds. I soak all my nuts and seeds (with the exception of a few) as soon as I get them from the store and then dehydrate them and store them in the freezer.

Thank you for this! Are you using raw almonds or are they somewhat processed already? The Costco (Kirkland) brand says their almonds are ‘steam pasteurized’. Would those be suitable for using in your recipe?

Yes! Most commercially available conventional almonds are pasteurized and you can definitely use those. Just make sure you roast them for the recipe.

You can find all the instructions for storing homemade almond butter on my blog (in the recipe card). Here's what it says: "Leftover almond butter keeps well in an airtight container in the refrigerator for up to 1 month. For longer-term storage, freeze for up to 6 months."

Is it safe to use almond with skin? I read in my Bosch food processor manual that almond skins can dull the blade

Hmm, I can't speak for Bosch. Vitamix blades are dull to begin with. Vitamix doesn't rely on sharp blades to crush ingredients but rather a powerful motor and a unique vortex action. In other words, you get the same results from the first to the thousandth blend.

Hi Karolina - you could, but you would also need to dehydrate them afterwards. The almonds have to be completely dry for the "recipe" to work.

I soak my nuts first (all nuts and seeds) to remove phytic acid, lectins and heavy metals, and then dry them for 2 days. I never roast them. Can't you make butters with raw nuts?

the main point is you should use a really powerful blender. I broke away my 2 blenders already while trying making almond butter . Hahaha)

You roast almonds because if you don't they are poisonous. That is probably more important than making the nut butter process easier.

It's definitely trickier, but you can. Make sure to use a heavy-bottomed pan and stir the nuts frequently to make sure they're evenly roasted. Watch that they don't burn on any hotspots.

You can use raw sprouted nuts instead. However, if you're not roasting them, you'll need to use a little bit of neutral oil to make the almond butter completely smooth.

Depends where you buy your almonds. I buy them in bulk, so making almond butter at home ends up being cheaper for me than buying it in the store.
