How to Make an Authentic Aloo Tikki With Chef Hussain | Vegetarian and Vegan-Friendly | Serves 4
If you love original, traditional Pakistani cuisine, you're in the right place. As part of our origins series, I visited my ancestor's village Jallo Chak, which is near the city of Dina in the district of Jhelum.
My family have lived in the village for generations, starting with my great grandfather who moved there over 150 years ago.
My ancestors were farmers, and local hotel owners that served meals, so food has always been a part of my family life when I was growing up.
I was able to catch up with everyone from the village (I hadn't been back since 2016) and spend some well-needed time with my family.
It was nice to see all the changes in the community, more hospitality, good food, culture growth, it’s a cool calm place, lots of greenery, fields away from the hustle and bustle of the city.
True to our heritage, our Aloo Tikki recipe is simple and easy to make; we use minimal ingredients, but our dishes are packed with flavour. I hope you enjoy making it as much as I do.
🍛 What is Aloo Tikki?
Aloo Tikki is a snack that originated in the Indian subcontinent; aloo means potato and Tikki means small cutlet or croquette in Hindi-Urdu and Marathi.
While Aloo Tikki isn't as well-known as the bhaji or pakora in Western culture, it's a snack that is similar to Western sides like the croquette.
Aloo Tikki is typically made using potatoes as the main component as well as vegetables such as onions, peas, spinach, and spices - it's a versatile snack that you can get creative with.
🥗 Is Aloo Tikki healthy?
Aloo Tikki is deep-fried, so they aren't the healthiest Asian food out there. We'd advise making them as an accompaniment to a weekend curry or as an indulgent treat, and always enjoy them in moderation.
🥘 Equipment:
-colander
-boiling pan
-potato masher
-wooden spoon
-mixing bowl
-chopping board
-sharp knife
-open pan or a wok if you don't have one - or you can shallow fry.
-kitchen roll
🛒 Ingredients for four portions:
-4 potatoes (mashed)
-1 tsp green chilli paste
-1 tbsp ginger paste
-1 tbsp garlic paste
-1 tsp salt
-1 tsp chilli powder
-1 tsp ground garam masala
-1 tsp coriander powder
-1 tsp chilli flakes
-pinch of fenugreek leaves
-pinch of green chillies
-2 eggs for coating
-300g breadcrumbs
-300 ml vegetable oil or enough to cover Tikki Aloo
📖 Recipe:
1. Boil, drain and mash your potatoes and leave to cool.
2. Put the oil into a pan and heat it up.
3. Put your mashed potato into a mixing bowl.
3. Add all of your spices (and veg if you're using) and mix together with your hands.
4. Shape into circular patties.
5. Crack your eggs into a bowl and put your breadcrumbs onto a plate.
6. Cover the patties in egg and then breadcrumbs then set aside ready to fry.
7. Slowly place your Tikkis in the oil and cook until golden brown.
8. Place on a plate with some kitchen foil to absorb excess oil.
9. Serve with your favourite curry or mint chutney.
