How to Make Authentic Chicken Tikka Skewers With Chef Hussain | Makes 3 Skewers
If you love original, simple Pakistani cuisine, you're in the right place. As part of our origins series, I visited my ancestor's village Jallo Chak, which is near the city of Dina in the district of Jhelum.
My family have lived in the village for generations, starting with my great grandfather who moved there over 150 years ago.
My ancestors were farmers, and local hotel owners that served meals, so food has always been a part of my family life when I was growing up.
I could catch up with everyone from the village (I hadn't been back since 2016) and spend some well-needed time with my family.
It was nice to see all the community changes, more hospitality, good food, and culture growth, it’s a cool calm place, lots of greenery, fields away from the city's hustle and bustle.
🍛 What Is Chicken Tikka?
Chicken tikka masala is the most popular curry in the UK according to Foodhub data. Still, chicken tikka originated in the Mughal empire on the Indian subcontinent and is popular in India, Pakistan and Bangladesh.
While the West adapted the dish to suit their requirements, in the east the dish is traditionally made with skewers on a brazier called angeethi after marinating in yoghurt and spices. The word tikka is Persian, meaning bits or pieces.
🥗 Is Chicken Tikka Healthy?
Yes, our chicken tikka recipe is healthy as we aren't using a lot of oil or deep-frying the skewers. If you want an even healthier version of this recipe, use low-fat yoghurt.
🥘 Equipment:
-BBQ or oven
-baking tray and foil (if you use an oven).
-wooden spoon
-mixing bowl
-chopping board
-sharp knife
-metal/wooden skewers
🛒 Ingredients:
-250g chicken cubes
-1/2 a cup of plain natural yoghurt
-1 tsp ginger paste
-1 tbsp of garlic paste
-1 tsp green chilli paste
-1 tsp turmeric powder
-2 tsp tandoori masala powder
-1/2 tsp whole cumin
-1 tsp salt
-1/2 tsp garam masala
-1/2 tsp coriander powder
-1 tsp chilli powder
-pinch of coriander
-5/6 tbsp oil
📖 Recipe:
-throw all your ingredients into a mixing bowl minus the chicken, and give it a good mix.
-put the chicken in and give it a good coating.
-leave your ingredients to marinate for a minimum of an hour, or overnight if you want a fuller flavour.
-when your chicken is marinated, heat your oven to 180 degrees celsius/350 Fahrenheit.
-place your chicken on the skewers leaving space for them to cook evenly, drizzle a little oil onto a baking tray and put your skewers on there ready to cook.
-wrap some foil around the baking tray and place in the oven for 20 mins and then reduce to 160 degrees celsius/320 Fahrenheit for a further hour.
-turn the meat occasionally and brush with a little oil if required.
-After an hour, check your meat is cooked and leave to rest for a couple of minutes.
-garnish with coriander and serve with mint chutney dip.
