Pasta Grannies teaches me that there is almost no way that you CAN NOT make pasta! As I first learned, it was made of flour and eggs, and you had to learn to roll it out super thin. Machines were cheating! Then I learned you could also make it with just semolina and water and salt, but you had to work SO hard to knead that tough dough! And rolling it took such patience, for it to relax and such skill to get it thin, thin, thin!. From Pasta Grannies, I've learned you can make it with almost any kind of wheat flour (or leftover bread dough!) and you can add oil, and you can shape it by rolling with your hands, or a rolling pin, or your hands and a fork, or a rolling pin and a knife and a spoon! What an amazing series! Thank you so much for going deep on one subject and showing us these amazing, disappearing, crazy bits of human art!

Great idea! Been in Le Marche for 17 years and never heard of pinciarelle.... I'm going to try this with pizza dough. After our pizza nights I always have left over dough as I need to make extra for unexpected guests and those with large appetites. I'll give this a try and let you know if it works out.

It has 'flour for pizzas' and I believe that is a hard wheat flour, but no semola. Other difference is of course the yeast, so I might get puffy pasta. Will report back, next pizza night is Thursday in 39degC heat!
