How to Make Homemade Pasta, Without Machine

In this Piatto™ video recipe, an Italian grandma ('Lulu') demonstrates how to make fresh homemade pasta without machines of any kind, using just a rolling pin! Here, Lulu makes a standard Italian egg pasta dough, then rolls it to less than 1 mm using a rolling pin and cuts it into tagliatelle pasta. Making homemade pasta without a machine is easy when you have a video recipe like this one.

Making fresh homemade pasta without a machine isn't hard, but does require patience and know-how. While you can use a pasta machine to stretch the egg pasta dough, here Lulu uses a large rolling pin to stretch the pasta dough to less than 1mm thick. Traditionally, fresh tagliatelle pasta needs to be between .6 mm and .8 mm thick.
The width of each tagliatelle pasta noodle should be about 7 mm. After cooked, the fresh tagliatelle noodles will swell to about 8 mm wide.
Fresh tagliatelle pasta needs to cook only about a minute in boiling water. Handmade tagliatelle pasta dried for one day will need about 1 minute and 30 seconds.
This fresh homemade pasta freezes well. To freeze, divide into 4 equal portions on a flat surface covered with semolina flour. Place uncovered in the freezer for a few hours. When the pasta noodles are frozen, cover with plastic. Frozen fresh homemade pasta should still take less than 2 minutes to cook to al dente.

INGREDIENTS for Fresh Handmade Pasta (serves 4-5)
flour - 300 grams / a little less than 3 cups (in Europe, use '0' flour)
eggs - 3 whole
olive oil (extra virgin) - about a teaspoon
semolina flour - for dusting (Bob's Red Mill makes a quality semolina flour)

If you want a long rolling pin like Lulu's. Don't spend a fortune, just buy a broom or mop handle from your local hardware shop , cut it to the size you want (You might even get two out of it) Give it a good clean with fresh lemon juice and away you go!

Better yet, buy the larger wooden rod used for hanging clothes. No finish to worry about and it closer to the diameter they usually are.

My mom and both grandmas have done this all their lives. Result is amazing. Theoretically you can do this with a machine but honestly you can tell the difference if you're used to hand made. Thank you for sharing.

This is good, but I also learnt a lot by applying some of the traditional techniques for hand rolling thin dough which Japanese use for Soba which is capable of making it not just thin but into a square shape

The thing they don't mention here is the board she is rolling the pasta on. It's unfinished wood and gets "impregnated" with flour....which makes the process MUCH easier. If you try to do this on a typical American countertop (formica, finished concrete, stainless steel) it will be far more difficult.

You can use a stand mixer. Be sure to start by adding just 3/4 of flour recommended and add more slowly as needed till you reach the consistency shown. It’s easy to add more flour, but harder to correct a dough that is too dry :)

Lulu does sometimes add a drop of olive oil (no more than 1 teaspoon for pasta for 4).

Hello guys. I tried making this at home but when I boiled it. It wasn't cooking, I boiled for abt 20 minutes for my pasta and it was just soggy and had a squishy taste. If you can help me please do so I'd really appreciate it

Hi there! The water should be boiling vigorously before you add the pasta (lots of bubbles and activity). You can see how vigorously for a moment in this video (minute 2:00): kzbin.info/www/bejne/aqTCfYJqqbSFrtE However, we will plan to release a video soon on 'how to cook pasta' for those who may wonder what exactly 'boiling' means for pasta and how to know if it is done. Also, fresh pasta only needs a minute or two-much less than dry pasta which still never needs more than about 10 minutes max to cook it to 'al dente', depending on the pasta. Fresh tagliatelle prepared properly only needs about a minute. So, that explains why your pasta was too soft. We appreciate the question! It lets us know what videos we should add in the future for those who may be totally new to cooking pasta. okay i made this it’s literally resting as i speak and honestly i don’t think i did it right, maybe because i used all-purpose flour so i’ll check back and update

All purpose flour is fine. Just remember there is no set portion of egg to flour. It's always best to add about 3/4 of the flour recommended and add more as needed until reaching the consistency shown in the video. Let us know how it went!

Great question! In fact, you can (see the spinach pasta in our lasagne bolognese video as an example). Just be sure to add just 3/4 of the flour called for to the bowl at first and only add more flour if needed.

I don't get it, my pasta always tastes raw still after cooking after a minute. It seems to be about the right thickness too.

Hi James-Italians like their pasta 'al dente' (which literally means 'to the teeth' or with a bit of bite. Could it be that's what you might be interpreting as 'raw'? By Italian standards, other countries tend to really overcook their pasta.
