For the most part it is very versatile. You can pick any flavor Cake, any flavor ice cream and any type of topping. Sweetened Heavy Cream with a good stabilizer is really the way to go, but it is also very versatile. You can flavors it as well, and you decorations can be anything from sprinkle and or cookie crumbs to cookies and pipped whipped cream rosettes. I think you could probably even do like a Red Velvet cake with a vanilla ice cream, I think there is actually a Red Velvet cake ice cream too, you can do a Cream Cheese Frosting, to use to pipe rosettes kind of thing.... It is as far as your imagination will take you. Basically the steps of how to build the ice cream cake, is about all that are kind of picky good luck

No, the frosting seals in the moisture and prevents it from drying out and hardening.
