Amazing tutorial! One question: do they hold nice through a party? Or would you keep it refrigerated and then they might hold up for up to 45 mins at room temp?

Hi! If you're using buttercream frosting you can leave it at room temperature for several hours after you've transported it to the final location. I would aim to refrigerate it until 4 hours before, if possible - the dollops of buttercream should hold their shape for at least that long :-)

Almost always, yes! For number cakes you could use ganache instead and follow the same technique. I wouldn't recommend using very soft/light frosting like whipped cream because the weight of the top cake layer will squash the filling!

Hi. I know this may be a silly question but did you make one batch of cake batter, baked it in one 9x13 pan, then cut it in half? Or was it two batches of cake batter? Just want to make sure I understand how you got two layers before carving the numbers.

Great question! Sorry I wasn't clear about that. I baked two cake layers (both 9x13) and traced three numbers onto each one (three x "2" and three x "1") so that I had three layers of cake for each number. I hope that makes sense!

In your professional and personal opinion do you think the buttermilk frosting would bode well on top a thin layer of raspberry or strawberry filling if chilled long enough? Or would it compromise the stability of the cake? I plan on making a two layer chocolate or vanilla cake with plain buttercream frosting (although PB sounds amazing!!!!) Hi! I would incorporate the raspberry or strawberry filling into the buttercream because I think piping the buttercream onto the berry filling might be tricky - it wouldn't stick as well as it would to a cake. But if you want to put the filling on first, I think chilling it would be the most successful way to do it :)

Hi!! This is a great tutorial-thanks!! I plan to make this then bring to my son who is in college for his 21st bday next month. I plan to make a vanilla cake :-) my question is, how soon in advanced can I make this cake without it drying since it’s a 3 hour drive to his campus? Also, would you recommend maybe strawberry preserves and/or simple syrup to keep the cake from drying out? Thanks!!

Hi! If you can bake the cake the day before, that would be ideal. I use simple syrup to keep the layers moist but preserves would be nice too. Then just put it in an airtight container like a tupperware or cake caddy. I transported this cake about 2 hours and I put it in the freezer for about an hour before I left to chill the buttercream filling so it held its shape better for the drive and it transported fantastically.

I prefer this method, cutting the shapes out of sheet cakes so you can choose the size AND it’s much easier to get sheet cakes out of the pans 😊

As long as you only leave it in there for long enough to chill it, it will soften as it comes to room temperature. If you leave it for several hours in the freezer you'll need to wrap it in cling film so that it doesn't dry out and harden
