I grew up in Jersey in the late 60s and early 70s before moving to Georgia and know the delicious and unique flavor of Carvel. I also get it everytime I take my family to Philly to visit relatives and wish we had Carvel back in Georgia. The ice cream you used didn't have a Carvel label so I'd just say you were making a good tasting ice cream cake, but not a Carvel ice cream cake. Here's a suggestion, make one with homemade frozen custard instead of ice cream. I bet it will be better. I'm making it Labor Day weekend. Thanks for the video.

Yes, I love Carvel ice cream. Surprisingly, this store bought ice cream was really close to how Carvel tastes. I loved Carvel soft serve chocolate ice cream cone with chocolate sprinkles. Nothing beats Carvel.

There could be a ballpark sunday with maybe like a buttered popcorn (or just plain vanilla) ice cream base, topped with peanuts, cracker jacks and carmel drizzle. I think it would be delicious! Is there anything else we could use to stabilize the frosting or is gelatin the only thing we can use?

Truthfully if I were to do it again I would skip using the gelatin. I think it will be stable enough without it. Adding the sugar does a good enough job of stabilizing the frosting.
