About Michelin Sushi Chef Tetsu:
His family owned a sushi restaurant in Saga Prefecture in the Kyushu region.
Chef Tetsu grew up close to sushi and Japanese cuisine from a young age.
He later went on to pursue a completely different career path, but when his father closed the sushi restaurant, he vowed to revive it.
In November 2007, he opened his first restaurant, "Yamasa Shoten Sushi Yoshi" in Saga.
As a consequence of the restaurant's popularity in Saga Prefecture, Michelin researchers visited the restaurant.
The restaurant was listed in the Michelin Guide twice. (2014, 2019)
In June 2019, he opened "Sushi Yamasa" in Nishinakasu, Fukuoka, offering the best time and sushi to customers from home and abroad in a restaurant overlooking the night view of Nakasu.

Hi, everyone! Have you ever heard of "Anago" (the conger eel), a unique culture in Japan? 🇯🇵 Unlike ordinary Sushi Topping, the fish has a very unique appearance and takes a long time to prepare. However, the taste is exceptionally good when it's made into Sushi, and not only does it have many fans, but it is also a first-class fish that is served at high-end Sushi restaurants! 🍣 It's a very rare fish, so if you find one, please give it a try! :) Thanks,

Do you know where to purchase conger eel in NY? Also, can you show a little more of the long preparation? Is it the filleting of the eel that takes time? Also was it cooked prior to the searing or is it served raw? Sorry for all the ?'s Love what you guys do! :)

We're sorry, but we haven't found Conger eel yet. However, there is a website that offers eel fillets in the United States. www.americanunagi.com/store/4-oz-smoked-eel-fillets Anago (the conger eel) and Unagi (the eel) are very similar in taste. :) And we'll make another video about the preparation. (Certainly it takes a lot of work!) The best way to eat Anago in Japan is to heat it well and season it thoroughly, so that the Umami comes through. 😉 Thank you for all the support as always!
