I have cooking eggplant into my Greek traditional recipes for years. Always in sauce with rice ect so this was a welcome change and I absolutely loved it. I cut them a little thicker, cooked them a little longer and they were moist and tender inside. Very much like they were fried. I Agree with Chris and plan on using it for a base for a casserole type dish for eggplant parmesan. Thank You Robin!

I'm still making eggplant this way. I just cut down my eggplants out of the garden and there were tons of eggplants in there for a giant harvest. I have the cutlets in the oven now. Can't wait. Love this recipe.

Lovely recipe - will definitely try it. My mother was Italian and used to cook eggplant all the time. I can't count the number of times I was sent to bed because I hated it and refused to eat it. Now - many, many years later it is one of my very favorite vegetables!!! Thank you!!!

This recipe was delicious! I've always fried my breaded eggplant in oil on the stove, but your recipe and technique was easier and tastier, less messy with clean up, and maybe a little healthier too. I tried your recipe for the first time several months ago, and my husband has been asking me when I am going to make it again... he prefers your recipe instead...YAY! I'm with him. Love your seasoning too. Thank you for sharing with us and I will be preparing breaded eggplant using your recipe from now on for sure! BTW, thank you for mentioning to people that this could also be made into a delicious GF meal just by using GF flour and GF bread crumbs... people who have recently been diagnosed with Celiac and are looking for recipes will appreciate it, I'm sure. My daughter was diagnosed quite a few years ago and back then, we struggled to find a variety of GF items she could eat. Much easier now, with companies like Bob's Red Mill and Progresso (to name a few) making GF flour and bread crumbs for people with Celiac. Skip the drain and use less salt or cheese in your coating. That is an extra step that goes against the draining. Like drying yourself off after a shower and then rinsing yourself off in the shower again, to remove the lint from the towel. Unnecessary.

I made this tonight & it was a hit, it'll be one of my go to recipes, it's crispy on the outside & soft inside, my only issue with the recipe is that's way too much panko & flour mixture and two eggs for one eggplant, unfortunately I hadn't thought to use the remaining mixture on my courgette as someone suggested below. Made these this past weekend for the family, Robin. They LOVED this and so did the wife and I. Especially, no standing over the stove frying on a hot day and the panko is our go to for anything we like crunchy so we keep it on stock in our pantry. It's available too in the Asian section of some groceries and of course in Asian markets. We also sprinkled a touch of turmeric and black pepper for obvious health and anti inflammatory issues and it can't even be tasted by the kids. Bright yellow hue makes it fun to eat! Thanks for this recipe! As always, your recipes are easy and delish! We even experimented with some chilie lime and mushroom umami blend seasonings from Trader Joe's but the kids loved the ones with Italian seasonings the best!

@@RockinRobinCooks Because I have to make sure the wife and I get that turmeric in, we sometimes sprinkle it on steaks. And is it ever great on rice! Anything that has other flavors will mask turmeric and black pepper if you don't use too much. A former Dr., now retired, told me he gets that turmeric in at least 1 level Tbsp a day. That's a lot but even a tsp. would help. Got any recipes with turmeric? Yeah, I can't tolerate the taste of golden milk so that one is out. LOL!

Very thorough recipe and instructions posted under the vid, thanks. Well written, complete, no typos. Some have mentioned sogginess - perhaps they did not salt and sweat the eggplant enough, or they cut the slices too thick. Others said it was too salty - maybe they used garlic SALT, instead of garlic POWDER. I learned years ago never to buy "garlic salt", but whole garlic powder, onion powder, etc.

Good job Robin, I tried this technique but instead of butter I used my atomizer filled with olive oil to moisten the tops. I made them as a side dish for a Mid-Eastern lamb dinner, so I seasoned the breading mixture with a little garlic powder, turmeric and finely minced cilantro. I served them with a spicy yogurt sauce, cayenne, garlic and more fresh cilantro, they were awesome. Keep on Rockin'

Mine came out perfect, crunchy not soggy. Doing the "salting & sweating" thing was new, I saw water pellets dripping away-so interesting. I had no white flour, so used Flaxseed powder with the Panko. I'll make it again-thx for your easy instructions-cheers!

I have to say that I stumbled on this video &t hought OK that looks good. So I followed the instructions. My 1st thought was the egg plant looked like a chicken cutlet. It was crispy (how I love it) the flavor from the Italian herbs was so good. So I made my own spaghetti sauce and layered the eggplant pwith parm and mozzarella cheese. Omg my husband said that it was the best EVER

Thank you for this recipe, they look and sound crispy and delicious! I usually fry mine but I'm glad I Ran across your video. This way is much better, going to try it next time I make eggplant parmigiana. I also subscribed to your channel!

I made these today, they came out Delicious, you have to flip them 1/2 way through its true, I think because I used eggs with milk and made it heavier, I wasn't sure about adding the butter at the end but I did and it is extremely Delicious

I like that crunch when you bit into the eggplant. I am going to try this but will veganize the recipe by using aquafaba instead of eggs and vegan butter instead of regular butter. Thanks for the inspiration!

This looks yummy, but doesn't the rinsing defeat the purpose of salting it to draw out the moisture?

The salting of the eggplant gets rid of any bitterness and helps with drawing out moisture. As long as you pat the eggplant dry after rinsing it won't be a problem.
