My oven has a fan function so I just dry them at 71 Celsius and it turns out real good and very fast.

Looks good definately will try all 3. I make kilos of jerky at a tim. I vacuum seal small portions and freeze. Freezing gives it a sticky good texture.

Good Recipes as usual! cutting in strips with the grain is best! IMHO, Thickness not as critical with hand cutting. Easy! Never gets crumbly as cutting across Grain does! Thx

Look up Microwave Assisted Extraction or MAE, you don't need the oil to get the flavor out of the spices. Works great!

I can imagine going against the grain of the meat, the seasoning can then be absorbed better into the Jerky from the flat layers. I think I'd want to try the first two recipes listed there. The super spicy one might be a little much for everyone.

Pro-tip: Do you want perfectly consistent slices? Buy a cheap home meat slicer. I always use it for my beef/deer jerky. So good.

we usually use Bai Jiu (白酒). It is a little hard to find outside of China. But you can use any beverage that has 30% alcohol content.

Adding a few drops of liquid smoke to the marinade would give them a more smoky flavor.

If you marinate in a vacuum seal, it will open the pores of the meat and infuse the marinate much faster.
