In this video, I will show you how to make Belgian Liège Waffles. These waffles differ from the typical Belgian waffles from Brussels. Instead of a liquid batter, these waffles are made with a yeasted dough that contains pearl sugar. They are smaller and more dense. The pearl sugar caramelizes during the grilling process, which gives it a crunchier, chewier, and stickier texture. These waffles taste perfect on their own, without any toppings. All-purpose flour 240g (2 cups)
Whole egg (room temp) 50g (1 large)
Whole milk (room temp) 115g (1/4 cup)
Instant yeast 2g (3/4 tsp)
Granulated sugar 12g (1 tbsp)
Salt 6g (1 tsp)
Vanilla paste 5g (1 tsp)
Unsalted butter (room temp) 113g (1 stick or 8 tbsp)
Pearl sugar 130g (1 cup)
