Hard to beat a good BBQ Chucky! Looks killer Larry, and your one of the few that I've watched that adds more rub into the meat after it's pulled. Makes all the difference in the world doesn't it? Great video!

Larry, I'm not sure I have even heard of "pulled beef." I thought it could be pulled me always meant pork. Now I have to try it! This episode is FULL of useful tips! It's like attending a culinary arts class at a university! Seeing your sandwich sauced up the way you have makes me swoon! I can just about taste it from here. The applewood smoke didn't hurt the meat a bit, I'll guess! Thanks for a great cooking lesson my friend!

Thank you very much John I really appreciate the kind words! Pulled beef is wonderful on it's own and even better in many other dishes as leftovers. If you don't want to do this outside on the grill, here's a crock pot version that you will need to tweak a bit to make it LC, but it's almost as good, just missed the smoke flavor! kzbin.info/www/bejne/hH29gnqsgNSchrc

Thank goodness someone else who wont use braising liquids on bbq beef. Not to shabby. However let me correct you that internal temp can garuntee a shreddable chuck. 210 internal min to 215. I also dig ur use of the oven once wrapped so do i. So i bring mine to 165 internal.. Wrap tight in 2 layers of foil. In oven at 250.. Bring roast to 210 internal then ill turn the oven to 210 and then cut the oven off leave in there un touched for an hour or 2.. Or by time the internal falls to like 150 or so it will shred itself no joke. Good stuff bud

I am doing a 3 lb. chuck seasoned with an italian seasoning now. Doing it in the oven at 250°. It seemed to stall at 130° so I wrapped it in foil. It got to 170° in an hour. I thought I was 30 - 40 minutes away from the resting stage. Wrong. Stalled again and now at 180° or so. Bumped temperature up to 300°. Hopefully done soon. It's 20:30 now. I expected to have a sandwich at 18:30 or so. Looks like it will be 22:30 now if I am lucky. I guess it's done when it's done. Not much you can do to expedite it. I think my chuck came from left side of the cow. Right side is more tender from the get go and cooks faster. Nice cook.
@TheWolfePit
@TheWolfePit 8 ай бұрын
Chuck roast to me, or one of the most stubborn pieces of meat, you can cook to the point of being tender. Temperature can give you an idea which would be at least over 200°, but the truest way to know when a chuck roast is done to stick of fork and twisted if it twists like spaghetti it's done.

I did years ago, but the torch is so much quicker and easier. 1-2 minutes of lighting with the torch, 10-15 minutes later you have an established bed of lit coals. Give it a try sometime to see how you like it! You may sell your chimney starter at the next yard sale! LOL Thanks for watching!

brisket is more expensive than chuck roast and can be more finicky. People do cook briskets on smokers similar to this (tons of videos on it), but then they tend to slice the brisket. If your objective is a shredded type of sandwich, I'd get chuck, which is a bit cheaper, and shreds nicely.
