Hi Blondie's Dad, I agree 100%. If you just stuck with the basic brown sugar syrup like Amy used in her traditional bingfen, you would have killed it because you won on aesthetics. 5/5 for sure. But I would definitely pick Mum's bingfen for creativity and taste. Sorry Amy, better luck next time. Here's an ingredient I'd recommend for the Blondie family to try... brown sugar boba. Amy, ever tried grass jelly? Cantonese call it 涼粉. Mainland and Taiwan might call it 仙草? You can buy it in cans. Many people just chill it, cut it into cubes in a bowl and sweeten it with the same brown sugar syrup you used for the bingfen. Just plain like that without the accompaniments. Herbal jello.

The Bingfen powder is more like a instant Bingfen for DIY, I think most Bingfen you had in China is made of Bingfen seed(冰粉籽), it's way more funny to make Bingfen with it, can't wait to see you try that if you can find it in Sydney😆

If you like 冰粉,you should also try 仙草 or 爱玉。 it’s same type of summertime dessert, but flavored jelly. Grass jelly is a medicinal grass that relieves heat or cools you body. Aiyu is lemon jello. Usually served with citrus fruit juice. Coconut milk, condensed milk, boba, summer fruits like watermelon, mango, are often considered appropriate.

China's best food can be found in Guangdong province. There is an old saying "食在廣州, 廚出鳳城” which literally means "Eat in Guangzhou, cooks from Shunde (順德)”. I am a native Pekingnese, but have travelled extensively in China. I can guarantee that food in GZ is much diversified and full of natural flavour, Cantonese seafood is also famous for its abundance and freshness! Your video about Chiu Zhou food was most impressive.

As a native in chengdu, we usually make bingfen from “climbing fig fruits”, or 薜荔子 in Chinese. That’s what adds those little bubbles in it, and makes the texture far better than powder-made ones.
