Judging by the process, he produced "cheddar cheese". Even if the process of cheddaring is technically done by stacking multiple loafs of cheese on top of each other - what he basically simulated that with the weight press - All the other processes are basically the same: adding chloride and rinnet, curding the milk, setting and draining to add fresh water, cooking the curd throughout the whole process on low heat. Though from what I remember, mass-produced cheddar is not being drained and re-watered like in the video, they just add a whole bunch more water instead to reduce acidity.

Note: the reason he put an egg in the salted water was so he could measure the density, the more salt the more dense and the more taste. For example: it the western Balkans there are two seas: Adriatik and Jon. Adriatik doesn't have a lot of salt, and is less dense, so you have a higher chance to drown. Jon has more salt and is more dense, so at that point it only matters is you know how to swim. Edit: Also the point where Adriatik and Jon meet is in Orikum, Albania, there the difference is more noticable.

@@DGneoseeker1 I live in Asia my whole life and I NEVER met lactose intolerant people even once. We drank milk every fckin day here. Heck its one of my favourite beverage.

@@ivrgn1720 Interesting. I wonder where that stereotype came from then. It even seems to affect bubble tea. "Milk tea" is not made with milk, but soya milk, apparently. Even in the UK.

@@DGneoseeker1 That is just a myth. Asians just have problem with milk as much as Europeans or Americans. It's just that some people have never drank a milk before or they stopped drinking milk, so they developed lactose intolerance. There are people with lactose intolerance or milk allergy from birth yes, but the percentage isn't so different from Caucasians. At least from my experience, Japanese, Korean, Taiwanese, and Thais like to eat cheese. And Asian milk tea, unless specifically labeled as soy milk, are made from cow juice.
