In the UK we call this Black Pudding and it is normally eaten for breakfast, if people are squeemish about using fresh blood there is dried blood which is just as good and easily available (and keeps longer) most black pudding recipe's in the UK use pearl barley instead of rice. The other difference is we use diced pork back fat which gives that marbled look and when fried goes a lovely golden brown. I pack mine in 1lb plastic sausage sleeve's, seal them up and cook them in a large slow cooker full of water, let them cool and freeze them, you can of course tie the 1lb sausage sleeves if you want smaller portions.

These look delicious My dad used to serve me thin slices of fried blood sausage on toast sprinkled with sugar when I was a kid, simple yet nutritious lunch Those sausages had liver and kidneys in them as well I believe

If possible, I would find a small polish/Slavic deli near you, there is a good chance the owners will know someone who raises animals, and can get blood for you.

Atomic Shrimp just did a take on black pudding with foraged greens (called it green pudding and it was all plant based as an experiment) - ramson and nettle I think, with pumpkin seed puree and oats. He was going for that traditional blood sausage vibe - very interesting.

Where do you get blood? In California, I can't even get it at the farmer's market because butchering has to be done only at USDA-approved slaughter houses (not on the farm) and the blood literally goes down the drain which is absolutely crazy because blood is extremely nutritious and tasty!
